      That is EXACTLY WHAT the europeans wereafter when they were looking foir the routes to India & accidently landed in & "discovered" the Americas... because as per MY PERSONAL LIVED experience ALL OVER THE WORLD, the claim of the white west that they went to India for spices & associate India with "curries" is VERY HIGHLY QUESTIONABLE, & & it seems the=y are underrating our intelligence to figure out what they were really after... for all the thousands of SPICES they took out of India because of their love for "curries," THEIR FOODS ALL STINK... And suck REALLY BIG TIME... They took that as a facade for SMUGGLING OUT OUR PHARMACUTICAL KNOWLEDGE of AYURVEDA... We were NOT using the spices on a daily routine for food... for that purpose it was only 5-6 herbs/plants/seeds/spices all together... ALL the others were used only for specific health promotion purposes & for disease healing & curing purposes AS MEDICINES. Most use in the west is really disgusting... they use it like one is using antibiotic as salt in the food... no wonder the modern medical industry is able to come out with their "state of the art research" on the EVIL/DANGEROUS/HARMFUL effects of the "natural spices" They do all the research on the Indian spices... I have NEVER see them do it on the likes of Lavender, rosemary,sage... thyme... olives... ypou get the point.

      Try Middle Eastern recipies such as from or Yemen or Lebanon on RUclips. I notice in Yemen they use the base for some soup is oatmeal cooked very well to give soup a rich creamy texture. Interesting.

    Hi I have a good suggestion for getting stickiness ... just add the hot water to the flour and kneed it...or use 2tbl sp of jowar flour and mix with water and heat it with continuous stirring so that it get like partridge and add it to flour and add some normal water to make it dough... it’s really good without addition of any other ingredients to it... it’s our staple food too..

    Auntie is awesome! Great video. Just an FYI: Xanthan gum does NOT expire. I have had the same bag stored in a bottle for over 5 years and it is just like new ( never put utensils in it, just pour out what I need) . And yes, you do NOT need very much at all. I think her ratio is perfect for the amount of flour.

    Thanks a lot all you wonderful ladies. This could not have come at a better time, I just had a visit to the health food store on my to do list for this week. I guess God has his own ways of helping. Mangalaji you are very knowledgeable and my son will certainly benefit from your tips. By introducing this section for allergy free Indian cooking you all certainly do add a pinch of spice in our lives!!!!

    1 cup sorghum flour (jowar flour)
    1 cup amaranth flour
    3 quarters of a cup corn starch
    1tsp Xanthan gum
    1/2 tsp salt

    These are just the proportions for the basic flour mix. The amount of water will depend on how you will be using this flour.

    You can also try gluten free millets and sorghum. Sorghun is Jowar in Indian grocery stores. Finger Millet is Ragi. There are a lot of recipes for Ragi and Jowar . Jowar rotis are very tasty. Ragi cooked balls are tasty too.

      Is there a recipe that u made using this recipie mixture e.g. those that u mention while mixing the flour? Would be nice to see how a dish came out before investing in all that flour to make the mixture.

    Be aware that some xantangum can be made from wheat so dubblecheck or safer exchange for guar. Also if diabetic check tapioka ( and cassava) as for some they might be trouble depending on amount .

    hi, i hv just been diagnosed with gluten allergy, and the biggest issue is roti substitute. im in uk. hopefully i ll find these in uk and eat rotis. thanks

      dubious26 in UK you can get them from any Indian grocery store like VB & sons, Deepak cash & carry, Patel brothers, or Bhavins too. Hope this helps.

      Slightly warm water always works better for kneading dough.

    Thank you for this valuable information. I have recently been undergoing several medically related problems, and, as I've been healthy all my life, I'm wondering what is going on!     I think corn starch is usually refined from GMO corn. I would substitute perhaps tapioca flour.

    to use the tapioca starch instead of the cornstarch, do I use the same amount? Thank you so much for this. My daughters have multiple allergies (gluten,egg,peanut,soy,dairy,shellfish,tree nuts) but we love rotis & other gluten foods. This is so helpful. I've been trying unsuccessfully to find these types of recipes for so many years now. Thank you.

    Tapioca flour/starch is made from the root of the cassava plant and it's binding proteins do not induce the same physiologic reaction to wheat/barley/rye-gluten that your body might produce if you have Celiac disease/gluten-intolerance. So you are safe with tapioca starch; it is a widely used ingredient in many many gluten-free recipes around the world and extremely safe.

    What if I don't want to use tapioca or corn or any starch ? Can I use egg whites for binding ? Dr William Davis of wheat belly recommends to avoid tapioca , corn starch and rice flour completely as they are worst for human body as wheat itself .

      You could possibly double up on one of the other flours.

      Amarnath.
      Cornstarch is little for binding.
      Then which flour should I substitute it with ?

      curiousandlooking you could use white rice flour instead, its more easily available . Or double the amount of amaranth flour.

      aisha b. You could double the amount of sorghum flour, or you could use white rice flour or chickpea flour or oat flour instead of amaranth flour.

    Just curious if I've missed anything...You'll have added 1 cup sorghum, 1 cup amaranth, 3/4 cup cornstarch, yet you say "we have used 3 3/4 cup"...what have I missed ??? Very keen to try this blend, but cant unless you clarify what I have missed, if anything.

    I am wondering if it's good for kids with Autism aswell...GF food is recommended for kids with Autism...however, is there anything in the flour mix you showed that may have an adverse effect on Artistic kids????

      Most of them were bought from an Indian/South Asian Grocery store. We are sure there is one in your area...give it a visit :)

      +2008anub : Honestly, we have not tried freezing them. You can freeze a couple and see how they work out...
      Yes, you can substitute arrowroot for cornstarch...
