    Wow, Wow, Wow. I just made this tonight. I just put it in my bread maker on bake after the high-speed blender. I let it sit for about 10 minutes. Then I baked it for 40 minutes in the bread maker. I checked it with a thermometer and made sure it was 205 degrees. it was so good. The bottom was crunchy and crusty. The top was pale. But it was so yummy. My new fav bread recipe. it's gluten free and cheap. But even if it wasn't gluten free, it would sill be great!

    Kia ora and Thank you for showing this is actually doable :) I first saw the rice bread recipe in chefsteps channel and thought, man I don't have a high speed blender :( knowing how hard rice grains are even when it is soaked overnight. Your down-to-earth humbleness encouraged me to give it a go as we are slowly reducing gluten. We eat cooked rice a lot and yes a bag of rice can go a long way. If you usually eat cooked rice try mixing white rice with red rice. It is very red not like the brown rice in supermarkets. You can usually buy red rice from Indian shops and it keeps you full long time due to high fiber content. Also be mindful of the arsenic content in rice too.

    • @CheaperWaysNZ
      @CheaperWaysNZ  2 года назад +3

      Oh wow never even heard of red rice before - thanks for the feedback! 😊

    • @daisyblue7209
      @daisyblue7209 Год назад +1

      I have read that when you soak rice it helps get some of the arsenic out. So it's a good thing that this bread recipe calls for soaking first.

    I soaked my brown rice for about 3-4 hours and followed the instructions to a T but it wouldn’t rise at all. I think the brown rice probably needs at least 24 hours to soak. I am going to buy brown basmati because it is softer than regular brown rice and see if that works or the much longer soak on the regular brown rice. I would definitely put it in a bread bag and store in the fridge. I am sick of paying $6-$7 for teeny tiny loaves!!

    I actually like to make it a multigrain bread, picking 4 out of 5 of these grains and adding 1/2 cup of each: quinoa, rice( any kind), sorghum ( tastes the most like wheat bread), finger millet ( has more nutrients, but a plain millet would work), oat groats. One could also use teff or amaranth as well. I substitute honey for the sugar usually, but you could use maple syrup too.
    I like to soak mine several days to make the grains more digestible, draining it once and then again prior to blending it ( this gets ride of the lectins which can interfere with digestion) but an overnight or 24 hour soak would work too. My hubby said this bread tastes better than multigrain wheat bread. You can add a Tbsp of Psyllium husks, to make it more the consistency of regular bread, but you may need to adjust the liquid slightly, but it makes a lovely loaf.
    I use mini loaf pans you use for bandana or dessert bread, and it makes 4 little loafs. We make 4 mini loafs, eat the first one on day one and then we slice the breads and fry them on the stove in butter or coconut bread, which is delicious.

    I do have a question that I would like to ask you. Is it possible to simply mix the sugar and the yeast like you do for a normal flour recipe? Then add it to your batter. That way you can easily monitor the yeast and water temperature like you do for wheat flour bread?

    • @CheaperWaysNZ

      Yeah I don't see why not, as rice flour is really just blended rice! Would still need to put it in the blender for the sake of heating to activate the yeast - worth a go!

    I left it in the oven a bit longer to get a more firm crust. It was 5 to 8 minutes longer, lost track of time because I was watching it. Going to try mini loaves in my Dutch oven next to see if it comes out differently. I’ve had rice bread that my neighbor makes. Her’s comes out with a more moist firmer texture. She’s weird about giving out recipes so I don’t ask anymore. I wonder what my neighbor does to the bread that makes it firm and moist?

Most processed gluten-free foods are lower in fiber, more processed and devoid of whole grains."
