Seriously subscribing to this channel was the best decision ever haha you guys make my day!
Tbh im loving the kenwood videos they are amazing
Tried this with chicken and i have to say it came out amazing!!! Thanks for the tips
made it, not quite the same way, used chicken and canned plums (too late to buy them). Loving it. thank you.
So could you guys show us how to do cold smoked cheese, next? XD Great video, boys!
"I'm gonna put that on crumpets." -British Mike saying british things
Need to try this.😋 specially that stir fry.
definitely though mike said “i’m going to put that on my armpits” about the plum sauce. you do you, mike.
Nice one Ben!! Definitely trying this one. I love duck and the homesmoker makes it even better but would it matter much if you replaced the the plums with orange? Obviously for an orange sauce lol
I was wondering if you had any ideas for making a duck sausage at home. I'm studying food history and read that in the Jewish lower east side, duck was a common meat used for sausage as a replacement for pork and I wanted to try and make it to see how it would work
*S M O K E* *M E A T* *E V E R Y D A Y*
Super idea!
Nicely done
Great video guys!! Quick Q wonder if you have the A...how many times can you use the woodchips? Is it a one smoke wonder?
What was amazing!!
Kenwood is an amazing brand to be sponsored by, well done indeed
The most British thing ever; wanting to put that on a crumpet... nice one Mike xD
That would be _deece_ on a t-shirt
You tube..a medium where every thing well done is rare ....sorry #meatpuns 🤘😝😝😝
Poornima Krishnan I applaud you, that was fantastic! 😂😂
It's nice to meat you, fellow Punster. If there's a meter to define your pun, it would be a meater.
Yes , just yes.....Well done
It sounds like you have a beef with Foodtubers ;D
Hey, lets cure this beef. Everyone makes misteaks, lets just meat in the middle and not dwell on it.
#duckandcoverwithplumsauce
Another winner!
I'd love more duck recipes!!
Lovely recipe, slightly surprised with how well done the duck was, I've always only eaten duck with a nice pink blush to it, just a personal preference, and I understand it puts a lot of people off medium/medium rare duck because the fear of "salmonella" and the similarities between duck and chicken, but there really is very little risk of salmonella when it comes to duck.
plum sauce is 💜 plum sauce is life.
You KILLED the duck. It’s so grey. Sure it tastes good though. Earl grey smoking is fantastic.
For the plum sauce usually black plums are used. Is there any difference in flavor when using the red?
Just watch an older Ireland video. Show us how to make Barmbrack. Sounds like something you could give as Christmas gifts. Other gifts for the holidays? That would be a good show
I love Chinese cooking the most. This looks great.
Music at the end is great
Sorted i am doing wraps for dinner! need sauce/paste idea's! thinking re fried beans!
love yall
That Health and Safety insert though 😂
Ben, could you smoke sausages at home using this technique?
I've just noticed you don't much talk about how easy clean up is or can be just that it is really important. I imagine the foil makes it easy for this, but I haven't thought about the rest of the recipes I've seen in your videos.
That duck is hammered!
Question can u reuse the tealeaves n wood chip to smoke round 2?
Ben, can you show us how to cold smoke cheese? That would make an interesting video!
A bit of tape on the vent? I find a small pinch of bread, any type, I use whole meal Pitts because l always have it. Dampen in water and massage into a paste. This is a brilliant vent sealer and can also be used to seal pan lids that go into ovens.
Is it possible to use this method in a crock pot/sllw cooker?
Have you changed the camera (or at least camera setting) ? It's look nicer and smoother
that's a genius way to smoke meat! I don't want to commit to a smoker but would like to try my hand at it. Question: would the same time limits used here work with chicken or pork, or should I wing it and use a thermometer to gauge temp?
that looks so damn delicious!
It's hard to get Duck where I'm from what kind of meat other than pork can I use as a substitute for this recipe?
Pls have Jamie try this with different cuts of beef! I would love to know what the cook times would be for a brisket :)
Would a metal steamer basket also work for this?
can you reuse the wood chips afterwards?
Lmaooo mike called ben out so hard 😂😂😂
How you know something is good: I'm gonna put that on a crumpet :D
You might be able to use some type of cheese that's quite heat resistant, such as Halloumi
Could you do this with a Steamer set? Put the chips into the bottom pot and the meat into the vented steam pot?
Please for the love of Christ can you make evaporated milk ice cream, I was thinking about it a while ago and it just seems so cool
Aaaah Mike. "I'm gonna take that home and put it on crumpets." Can you get any more British??? 😂
Silly question but would you be able to smoke quorn chicken?
I use lapsang souchong tea. But I'll try earl grey.
Can you use regular wood chips?
Smoked cheese fondue anyone?
This is great and all, but Mike, darling, you are looking *so* good.
Would chicken thighs be a good substitute for the duck here? It's hard to get ahold of good duck in my area, but this is so good looking I have GOT to try it.
0ArmoredSoul0 yes, skin on would be perfect, possibly reduce the cooking time as the duck breasts Ben used are a lot larger than your average chicken thigh
I think putting the week's theme in the thumbnails would really help! It feels like there's a lack of consistency - even though I love every video, of course
hello sorted food, i would like to know how did you cook your rice ? please
Minat Gaët presumably they boiled it
I ve seen some people add rice to the wood chips , any idea why that would help?
Any tips for properly storing leftover sauces/jams? Would love to make something like this but not sure how to keep all the leftovers fresh for weeks/months
Vani C sterilised mason jar (washed with warm soapy water and heated in the oven to kill any bacteria - then throw it in the fridge.
Smoked duck with kalettes are really nice. Oooh do a recipe using kalettes.
I've never heard of kalettes before!
Kalettes are a hybrid plant brand name for kale sprouts, derived from a cross between kale and Brussels sprouts.
Could you smoke tofu in the same way? My family loves smoked tofu, but it’d be nice to make it at home...
Since Tofu wont melt I'm sure you can
How much times can you use those wood chips?
6:15 Are there many caterers in GB who are just entitled home cooks? That happens a lot, in the US.
As a Chinese person, born and raised, I've never ever seen a sauce made from plum.
whooooo is needing a sorted live stream as much as me?!
How do you Cold Smoke Cheese?
If you don't have a smoker, you can use a smaller version of a set-up similar to what Ramsay builds in this video: ruclips.net/video/jBmNYNIX-jk/видео.html
The most important thing is to keep the temperature low by separating your heat source from the cheese and smoking when it's cold outdoors.
There are plenty of good in-depth guides to cold smoking, and I would recommend doing your research well before trying it so you don't end up wasting a bunch of time and money. It's really quite easy once you understand the basics.
something like a hard cheese wouldn't melt like halumi or somthing
Use a smoking gun and a lidded pan
would you need to adjust the amount of time smoking your meats if you were to use more than 2 duck breasts or is the 20min on heat : 10min off heat ratio almost universal? Say I wanted to smoke a whole cut-up chicken, would that still be enough time to infuse the smokey flavor throughout the chicken?
if you put cream over the smoke, could you then smoke it?since the rage is all about about smoked ice cream at the moment...
Great video! Exactly what I was thinking! How can you teach a great handy smoking cooking hack if not with rare duck with chutney! Epic! And the onions come on! What a twist! So unexpected! I bet they don’t even know if it worked or not… clickbait
Ben, if you want to smoke cheap cuts of beef like brisket or pork for pulled pork, what is the estimated time for them to cook in that smoking technique? First and foremost is it feasible to cook brisket and pork using that technique?
If they fit in the pot, I don't see why not. They'd probably just need an hour or so instead of 20 minutes. Maybe more wood chips, too. Not sure on that.
Smoke meat everyday
Saw James Martin do this about 20 years ago.
Did you soak your wood chips before you put them in the pan? What about the tea?
Vegetarian Christmas ideas please 😇 (also yes I'm vegetarian and still watch the meaty videos) 😂
Would it also work in a crockpot? Maybe high heat for a few hours maybe not even an hour???
Casper Sav probably not, temperature is too low to make the wood smoke.
Dear Chefs and Normals: Can you smoke soft boiled eggs? Would be awesome of salads or ramen if you can
How long would this take with other meats? Like, lets say I wanted to smoke a pork roast.
The best thing I've ever had that was smoked... chocolate chip cookies. Just bake them all the way through in the smoker.
A simmiller technique can be done with a wok
*similar
Hope we get a cold smoke video
You might have to be careful with the type of pan. I'm not entirely sure this would be safe with, say, a non-stick coated pan.
Hi guys. Just wondering if that could be done the other way around? Gently brown the meat first and then smoke it? So your not frying away the smoked flavours, as it were.
Vanessa Ina Peart presumably not, it would overcook the outside.
Suggestion: Do a video on how to make mead.
ZOD4 it's really easy actually
How would the recipe change if i wanted to do that to a hole duck? And is it possible. Would be awesome for Christmas
I'm guessing you could smoke the whole duck in a large pan for 30-35 mins to infuse the smokey flavour then finish it off in the oven using a temperature probe. I haven't tried this so it's just speculating, but this method should work. Seen as a whole duck would take a while to cook in the smoker, you could smoke it for longer maybe 40+ mins to infuse more smoke flavour as well!
Elliot Cooper thank you.
no worries mate, hope it works well for you!
where did you get your wood cheap? Online 😂
梅子燜鴨!!! And took it a level up!!!(Somehow
Reckon halloumi would smoke like this? is smoked halloumi a thing? I feel like it should be a thing
Definitely sounds like it should be a thing.... and a nice thing at that
Smoked halloumi is definitely a thing, I've had it several times
It's real and tastes great.
does this work for salmon too?
Mandy Li yes, reduce the cooking time though
'How to smoke meat using have you already have at home'. Don't know about anyone else, but I don't have either wood chips or a colander that fits inside any of my pans. Or anything even remotely colander like that fits inside my pans. Would a steamer pan set work instead?
Did you guys have issues with the smoke detector going off when you were smoking the duck?
can you move to the US to cook for me everyday, Ben? I'm getting tired of tostino pizzas every day
cheeky chef swap at 5:07
Did you change the timing??
The clocks have gone back in the UK so it may be slightly different timing for ya
Smoke your cheese however you'd like! Don't let Ben and his "science" hold you back! lol
I love that they stopped disclose sponsorships in their videos.
In my experience, spices burn if rubbed on the outside and seared. especially going in a cold pan and coming to temperature.
I get better results putting meats skin side down in a hot pan for a short amount of time, taking it off the heat and then glazing it with spices and honey.
Nemecross also honey in general seems to like to burn. Not sure why Ben chose to do it this way.
he definitely wanted it to char like that
Ok, now after dashing our hopes of smoking cheese, you have to make a cold smoking video. 😊
Mike's a sort
What would be the best fat to use if cooking this recipe as chicken?
Kelly McP duck is great if you have it, it's extremely rich. Otherwise use whatever oil you have to hand, preferably one with a high smoke point.
