Hi, I'm a chef from Sweden and I've worked in no less than four restaurants that served meatballs, including the one I currently work at. I thought I'd just straighten some things out just in case you're interested in learning about scandinavian (swedish) cuisine. A common misconception of Swedish cuisine is that we use dill in everything. We do not. It's typically used with fish, see "Salmon gravadlax" or "Skagenröra" that are two great examples of traditional scandinavian dishes with dill to get an idea of how we use dill in them. I've seen some chefs use dill with braised meats but its not very common. However it's fucking lovely with slowcooked lambshank or brisket for instance. I've never ever seen anyone put dill in meatballs, though.. You should also try to serve your meatballs with some pickled cucumber, as it's traditionally done in Sweden. The sharp tangy flavor really cuts nicely through the rich sauce, potatoes and meat and goes brilliantly with the sweetness of the lingonberry. :)
Oh, and the rasberries made me cringe. Why did you do that?
Swedes do put dill in other meat dishes, such as "Dillkött" which is an old Swedish traditional dish
Max Bogren-Lindahl right!? Wtf happened there!?
Jag har då flera gånger fått Köttbullar serverade med dill så tror det kan variera från region till region. Har även fått pannbiff med dill. 🙂
When I first visited Sweden 23 years ago, I was served french fries with dill at a cafe in Ängelholm. That cemented the idea of Sweden=Dill for me...
Not to mention, we would fry it in butter not oil.
Raspberries with the meatballs? What? Also, that´s not nearly enough lingonsylt in the final serving.
cheddarrainbow verkligen inte. Åtminstone fem skedar för fan!
amy19902b 😂😂ja man måste ju ha mycket lingonsylt.
Difference between ground pork and ground beef: you can mix pork as much as you want as it actually gets better. Beef will get tough if you overmix and using fingertips is good. Therefore, you mix the pork with everything first, then gently add the ground beef so it stays tender.
Coming from a Swedish person: what is wrong with the recipe? Not much, given that there are variations of the traditional Swedish meatballs, it comes rather close to accuracy.
Normally we'd use milk and not cream for soaking the breadcrumbs, in some variations you'd use cold boiled potatoes instead of breadcrumbs (good for those with gluten intolerance).
An egg (or just egg yolk) usually put in too.
Dill in the sauce isn't common but it's acceptable.
RASPBERRIES DO NOT GO ON THE PLATE!!
Sometimes you'd have pickled cucumber on the side, quite common. Especially a quick pickled cucumber (using pressure) with parsley, which is where the herbs normally would come in.
Your comment should be top on the list, cause this is a correct assessment of what went wrong and how to fix it! Also not too uncommon to have fine grated carrot in the meatballs, nor is it too uncommon with more milk/cream and a bit of soy sauce in the sauce :)
Awesome assessment. I thought the raspberry was weird but being American I wasnt sure if it was traditional or not.
@ you can use veal, normally I'd use beef though some use pork.
@@iluvdissheet lingonberries is the traditional thing to have with Swedish meatballs.
@@thevermilionwitch thanks! I learn something new from this channel every video! So would cranberry be a substitute? Raspberries in my opinion are sweet which is why I thought that would make the flavor profile odd but cranberries are more tart....just curious
As a swede, I gotta say this looked pretty good! Not sure what you were doing with the raspberries at the end though, those shouldn't have been there, not if you wanted to do it properly swedish, that is. Also Mike, Lappland is Sweden, it's a province ;)
I'm pretty sure he was referring to Finland's Lappland though.
fictionalkajsa Sorted always adds their own Sorted twist to things lmao so it's never gonna be exactly pin point accurate just saying ~
@@inthepresent8278 yeah, but that twist shouldn't be such delicious things as raspberries to köttbullar with brown sace (usually it's cream sause from what my childhood has taught me) and mashed potatoes. Also, why is it dill in this? We usually only use dill for fish in sweden
Lapland is a province in Sweden, province in Finland and kind of a general name for the northern parts of north Europe. Just wanted to correct a fellow Nordic😌
@@babyshinx lappland in norway too my friend ;)
Jamie’s smirk when he’s secretly trying to catch a Benuendo is priceless.
I am from Sweden, so I am here to judge.
Sverige bror
Sverige!!!
Vi alla från Sverige är här för att döma😂
Jadå
Och i vanlig ordningar har svennar ingenting att komma med...
Varför har de gräddfil i såsen? Vad är grejen med dillen? Vem sjuder sina köttbullar i såsen? Vad FAN gör hallonen på tallriken?!
that intro was amazing, Mike ability to catch food out of the air is amazing
Bennuendo of the day: "always tong your balls.." :D
mike being so polite and raising his hand. oh mike youre truly a treasure to behold.
How many likes do i need for Ben to wear a pink sombrero?
seems fair! And then make him wear it for a whole recipe without adressing it at all.
Likes? I'd pay money to see that!
SORTEDfood Great, where can I donate?
Mulky Ghedi ok I get ur point but wearing a hat to represent a culture isn't appropriation, appropriation is claiming something as your own race's
Malte Wesemann I
If this isn't gonna be full week with nonstop jokes about Barry's name, I will be very disappointed. Or should that be "berry" disappointed? And no, I'm not sorry for that pun.
Mike, we're counting on you.
Soppe23 Jesus that pun was an emberrysment
ugh that pun was unberryable
All this berriment needs to stop now. It's all berry unberrycoming.
I want to berry this comment cuz of all the puns. But then again, this chain of comments is sweet.
As a swede I approve of those meatballs, but I'm not sure about the process... plus, we dont put the lingon berrys in the brown sauce and we dont have rasperrys in the dish
Lingonberry in the brown sauce is pretty common, but technically its called "lingonsås" if you add lingoberry to brown sauce. The recipe is pretty much spot on except for the raspberries.
Allt utom hallonen var rätt standard. FInns många sätt att svänga ihop köttbullar och mos!
hallonet654 jag har varit i Karlskrona till kiruna aldrig fått se eller testa någon lingonsås
They nailed a lot of things but the raspberries at the end is just disturbing.
Swanny_ Boy Sorted always adds their own Sorted twist to things lmao so it's never gonna be exactly pin point accurate just saying ~
Can I just say, I've really enjoyed these weekly themes. Some weeks are better than others, but I like the content Sorted Food is producing right now. Keep up the good work =P
Ben: *first adds dill to the sauce, then plates the dish with raspberries*
The entire Nordics: "dafuq...ok, i guess....wait, what.....nnnnoooooooo-"
Soooo... a lot of Swede's will have opinions on this. 😂 But personally, no dill in the sauce. Lingonberries in the sauce is ok, not dill. Never had dill in the sauce wherever I've eaten meatballs. And raspberries? What?! No no no. 😂
Other than that I think you did a great job with a Swedish classic. 😄
Sarah Adolfsson weeelllll if you know Sorted long enough, you'd know that Sorted always adds their own Sorted twist to things lmao so it's never gonna be exactly pin point accurate just saying ~
KarYeng :3 ive seen you commenting that a few times now, and yes, they do put their own twist to it but putting raspberries with it it just taking it too far 😂😂
Also, both onions and meatballs should be fried in butter, not oil!
KarYeng :3 yea I know, but why do all non-Swede's put dill in or with meatballs? They do not go together at all...
Having made this myself, the Dill adds a lot to it. Try it some time!
Swedish meatballs aren't usually served with dill, but everything else you nailed, good job Ben
49divan except the raspberries
49divan ska ju vara gräddsås
49divan och inga hallon!
49divan Sorted always adds their own Sorted twist to things lmao so it's never gonna be exactly pin point accurate just saying ~
It's the Sorted 'sprig of mint' touch 😂
You should really have a Scandinavian week! All the pastries, ryebread and leverpostej 😄
Wow, simple and easy to follow along and looks delish! I may have to make this one.
that looks amazing!! absolutely going to make this!
Thanks so much for the great recipe, guys! I made it for my mom's birthday, and it was a huge hit! I got so many compliments and there were no leftovers.
"Like a bechamel, but stock instead of milk"
So, veloute?
Hahahahah Chef vs. Chef
@Piotr Kaczmarczyk yeah and if you want to get eeeeeven more technical, a velouté is made with a light roux, or roux blanc/blond not a dark roux/roux brun like they used in the video.
Still rocking this recipe! The whole family loves it
I keep seeing this thumbnail, and I STILL CAN'T GET OVER THE RASPBERRIES. WHY DID YOU DO THAT?!?
I just had some Swedish meatballs from IKEA yesterday now I'm craving more, thanks Sorted!!!!!!
you shuld do something with cloudberry
I am so here for this week in general and this recipe in particular
That leveled up Mashed Potatoes recipe is awesome, I've tried it and thought it was a winner.
Mike What have you done Why didn't you specify which Lappland there's gonna be a whole debate now
Especially since it's a video about Sweden, Swedes always start a fuss because of it haha
Haha! Fell on the finish line. Raspberrys Ben? Where did that come from?
my Swedish grandma used coffee for part of the beef broth in the gravy. Adds another layer of flavor to the dish.
Didn't realize till 7'45" that my mouth was salivating...true sign of a great dish.
Just made this for dinner! It was so delicious!💜💜💜💜
I love this recipe so much!! One of my favourite ones :) If anyone ever wanted to try it, I can only recommend it, it's the best
I found the same lingonberry jam at a store in Canada; sounds like a good excuse to try this recipe.
its always amazing to see someome mess up a so simple dish!
this will be a berry good week of great recipes
You guys made a Swedish meatball video aaaaages ago...I'm talking years. I used it in my university years and I still go back to it, but I'm excited to try this new and exciting version!
looks great, well done!
I am from Sweden, and I can say that you DON'T HAVE RASBERRIES WITH THIS! Only lingon berries.
Theo Byström let people explore them! Dont kill cooking vibes
Swede APPROVED!! Gonna try putting dill and parsley into my sauce in the future.
Major props to the best meatball recipe by Sorted yet. Sweet job (i mean tangy job as in tangy berries) boys!
This looks incredible - never had the flat pack balls and now I don't need to! Also I'm totally going to use that brown sauce idea for making an extra silky sunday roast gravy.
You guys are on a roll this week! Love the content💗
That looks so delicious
Lappland is in Sweden, and yes, meatballs with lingonberrys are "just from Sweden". Even though my grandmother in Finland also eats her meatballs with lingonberrys. She lived half her life in Sweden, thats why. ;)
Lappland is in both Sweden and Finland, innit?
That looks delicious
I make a turkey meatball/meatloaf that tastes like Thanksgiving. I finely chop mushrooms and sauté them, use ground turkey, cheap Parmesan cheese( handful)
Grated onion, some breadcrumbs to firm up the turkey and lots of sage and poultry seasoning. Instead of red sauce I make a stroganoff style gravy and serve over noodles.
"always tongue the balls"... every episode they turn up the innuendos a level ;)
Holy crap I literally just woke up and I could go for about 5 portions of this right now.
I'm Swedish and you uploaded this on my birthday!
Guys! First of all, dill and raspberries does not go with meatballs. Dill is most often used with summer potatoes or fish (herring/sill and salmon) and the raspberries are for dessert, preferably with cream and milk if you have enough for a bowl each.
Now, back to the meatballs. No other spices apart from salt and pepper should go into the meatballs (local and family recipes might say otherwise, but the old Swedish cookbooks are quite basic. Moreover the mashed potatoes should be made with butter and whole milk after being mashed, then seasoned with salt, pepper and nutmeg to taste. Remember! This is an everyday dish here in Sweden and is therefore very simple with basic flavours.
By the way, It's a VERY Swedish dish. In Denmark the meatballs are generally made with raw onions and are about 3 times the size of the Swedish ones... and we eat them with pickled beets or ketchup in Denmark.
If you are wondering where I get my information from, it's straight from the source: one Swedish grandmother and one Danish grandmother.
you did a different version of this years ago. I have been making it for my family ever since then
I´m swedish, and I got to say that those meatballs looks delicious :)
Don't need notifications cause I was already binge watching yous 😂😂
You guy's original Swedish meatballs recipe was actually the first one I ever tried to make.
I love this mystery box opening 😂😂😂
First swedish smörgåstårta and now köttbullar Love you guys
Dang this look so so good
I made it today. It was UNBELIEVABLE!!!
was really hoping for a Scandinavian week!
My polish nan always put dill on boiled potatoes or in mash and its sooo good
Always learning! I had no Ikea that allspice was a berry...
"always tong the balls" well, now I've heard everything.
I've been struggling to get a Swedish meatball somewhere close to as good as the ones I eat at the annual Swedish fair I go to, will have to give this a whirl!
I absolutely LOVE lingonberry jam. I eat it with absolutely EVERYTHING. Got some cheese sauce? Lingonberry jam. Some beefroulads? Lingonberry jam. Some baked Salmon? Lingonberry jam.
Lingonberry jam is the best.
Bra jobbat grabbar, ser ut som det ska göra! :)
Just wanted to add in that in Sweden we don't cook the meatballs in the sauce, we pour it over the meatballs when they're on the plate with the potatoes and the jam so everything get sauce:))
Im late but I am totally gonna make this recipe. And I'm Swedish! Not gonna have lingon berry jam though... Much better with "raw stired" sugered lingon berrys
This looks berry good.
Admirable restraint, guys😀
At 7:23 I was worried that Ben was whipping out a sprig of mint lol
As a swede, I have to say that´s the most authentic swedish meatballs i have seen on youtube. Not 100% like I would do it, but close enough.
The sauce was extra authentic. That´s what most people seem to get wrong.
The only things I would do differently is:
1. Less allspice. That seemed like WAY too much. It can easily overpower everything else, but extra points that you actually used allspice. It is indeed important for the authentic meatball flavour.
2. I would not put dill in the sauce. Maybe in the mash, but not in the sauce. It is a very swedish herb though, so I can´t really complain.
3. I would add a little cognac (just a few splashes) to the meat mixture before rolling the meatballs. It enhances the flavour tenfold. Trust me, it´s amazing. This is not typical though, just the way I do it.
Overall, amazing meatballs! Many points to you.
Oh, yeah, one more thing. NO RASPBERRIES PLEASE! Lingon all the way, and nothing else!
ei96byod cognac and dill mash sounds great! Noted for next time I'm making them! Thanks!
Yeah. Dill and potatoes are really good friends. My mother would always put the thick woody stalks from her dill in the pot when boiling potatoes (preferably new potatoes, or at least a waxy potato), with plenty of salt. Mouth watering memory there.
I like seeing your take on iconic dishes. Keep it coming!
Hey I'm in Oxfordshire for 10 days and would be glad if you guy recommended a place to eat at there
Guys, this recipe is amazing. I just made it and I'm literally right now sitting in front of my computer with a plate of delicious Swedish meatballs with mash and I am in love!! Thank you, this just made it in my personal food hall of fame!
where do url get the background music...😅😅...it's nice...awsome recipe..
YASSSS!!!! FINALLY!!! SWEDISH MEATBALLS!!!
I miss the set-up of this FridgeCam season with these themes! If we could bring the themes back in some way I'd love it
IKEAs köttbullar is the best thing! Im so happy you made this
delicious 😋
Mike is me in client meetings. LOL
Barry's face at 5:54 so shocked by Ben completely ignoring him!!
I really like that pan tbh.
We also do the meatballs the day before. Since bread crumbs need time to exapand and incorporate
Wait a minute Partridgeberry Jam in Gravy? Not sure exactly how i feel about that one, but it might be worth a try. (Partridgeberry is what we call lingonberry in Newfoundland)
Binging from the beginning as i’ve only found the channel in the last couple months and this one just surprised the heck outta me.
Watched this recently, craved meatballs, went to IKEA for lunch. They should give you commission ;)
SORTEDfood, stop making me so god damn hungry with delicious foods! XD
the real-est energy in the room is the guy in the chef outfit
jamie absolutely set that innuendo up for ben
4:38 Kan någon rätta till D'et`? Det hänger snett för helvete!
First of this is a great swedish meatballs recepie for anyone who want to try making swedish meatballs at home and never done so before. Nonetheless, I got to ask is there a reason why you use dill over parsley as I believe dill rarely are used with swedish meatballs if at all. Also, I would like to say that the raspberry was very interesting add on might even try it myself next time.
I finally got see bens Swedish meatballs!!!
you guys missed out on the "pressgurka" wich is also abit key to the meatballs. and there is no dill involved in the dish traditionaly
charles carbring Sorted always adds their own Sorted twist to things lmao so it's never gonna be exactly pin point accurate just saying ~
KarYeng :3 nice not right here. But why
Always tong the balls. Naughty! Very good.
I have never tried Lingonberry jam will have to give it a try. Now if All Spice is a fruit what is Season All then as a question?
You know you've been watching sortedfood for a while when you know exactly what they're going to say about allspice the moment they start to talk about it. 👏🏼👌🏼
meme bean still amazes us and confuses Barry
Always love watching none swedes make Swedish recipes 😄 But... I agree with my fellow swedes. Lingonberry jam in the brown sauce? Raspberries on top? Dill? What? I mean, it's creative I guess ☺
For soft meatballs - you can use white bread (best stale bread) + milk
The literal translation of the swedish word for allspice is "spice pepper" (kryddpeppar)...however, you can't say "it's not a spice, it's a berry", because there's no such thing as a "spice"... spice is not a type of plant, or a specific type of anything. It's just a word we use for ingredients that are added in (relatively) small quatities to add flavor to stuff.
Jamie's face waiting for Ben to finish the sentence, "smaller than the average ball", but thankfully, he said, "smaller than the average Italian meatball"....
