Smoky Thai Style Spare Ribs Are My New Favorite! | Ash Kickin' BBQ

  • In today's video, I will be showing you my new favorite way to smoke ribs, and the final result are delicious, smoky Thai style spare ribs! These ribs are incredibly easy, as they require no wrap. You're literally marinating the ribs for a couple hours, and then smoking them until they're done! These Thai style spare ribs are definitely a non-traditional approach to BBQ, but they are absolutely amazing, and I'm willing to bet that you might find them to be your new favorite as well!     Here is my take on the recipe and the one used in the video:
    Full Recipe:
    | Ingredients |
    For the ribs:
    -Spare Ribs
    -8 cilantro stems and seeds (plus 2-3 more reserved for the sauce)
    -3-4 whole green onions (reserve 1-2 for topping at the end)
    -1 tablespoon coarse black pepper
    -1 tablespoon of kosher salt
    -3 tablespoons fish sauce
    -3 tablespoons soy sauce
    -2 tablespoons brown sugar
    -1 tube of garlic paste (or 8-10 fresh cloves of garlic finely chopped)
    -Sofa King Awesome Thai Dragon Rub / sofakingawesomeproducts
    For the sauce:
    -1 tablespoon lime juice (or to taste)
    -1 tablespoon fish sauce (or to taste)
    -Red pepper flakes (to taste)
    -Hot Honey (to taste)
    -3 cilantro stems and leaves finely chopped
    -2 green onions sliced thin (greens)
    | Instructions |
    Prep:
    1. Remove ribs from packaging, trim if necessary, and pat dry.
    2. Season the ribs with a light coating of Sofa King Awesome Thai Dragon rub
    3. Mix Marinade ingredients together, cover the top of ribs with a little marinade and rub in. Then transfer the ribs into a 2 gallon ziploc bag, and dump the rest of the marinade in. Marinade in the fridge for 2 hours, flipping every 15 mins or so.
    | Cooking |
    1. Set your smoker temperature for 275° F.
    2. Put the ribs on the smoker, and smoker unwrapped until done. If you want, you can wrap to speed up the cook, but we advise riding it out and cooking them naked until done. This took about 6 hours on this smoker at 275º F
    3. Once the ribs are tender and done, remove the smoker and wrap the ribs in foil to rest for 30 minutes.
    4. After the ribs have rested, remove from the smoker and sauce the ribs up with the sauce recipe, then garnish the tops with finely sliced green onions.
    5. After the ribs have been sauced and garnished, slice, eat, and enjoy my new favorite smoky thai style spare ribs!

    How spicy are they? They look delicious! I would omit the cilantro.

      They’re not spicy. But the cilantro is a pretty big part of the dish flavor wise. I don’t suggest omitting it if you can help it.

      275 degrees for 6 hours unwrapped.
