Full Recipe:

-1 rack of pork spare ribs
-Ash Kickin' BBQ Honey Chipotle
-SPG (recipe below)
-Vinegar BBQ Sauce
| Instructions |
Prep:
1. Remove the ribs from the packaging and pat dry.
2. Trim the ribs per the instructions in the video
3. Season the ribs with a simple SPG and Lawry's seasoning. Here's the recipe I used:
-8 parts coarse ground pepper
-3 parts Lawry's
-3 parts Kosher salt
-1 part granulated garlic
Then add another layer of my Ash Kickin' BBQ Honey Chipotle seasoning for color and flavor.

1. Set your smoker for 250º F
2. Put the ribs on the smoker, and let them smoke until the color is where you want it. For me, this took about 2 hours. Please note, this might vary for you depending on your cooker.
3. Once the ribs have reached the right color, and the bark is set, it's time to wrap. Lay down two sheets of aluminum foil, and then lay down a couple lines of vinegar BBQ sauce, then put the ribs meat side down, and add a little more sauce to the bone side of the rack. Then wrap the ribs up tightly, and return to the smoker.
4. Once the ribs are back on the smoker, I would check them after 45 minutes for doneness. For mine to finish, it took about an hour. If after the hour mark, check every 15 minutes. The ribs should bend easily, but not break. typically 203-205º in the center of the rack is a good number, but this is a guideline. You MUST go by feel.
5. Once the ribs are one, remove them from the smoker, and let them rest for 20 minutes completely wrapped up.
6. After a 20 minute rest, remove your perfectly smoked ribs, slice, eat, and enjoy! I promise these will be a hit for anyone who eats them!

I literally just did the exact same rack with the vinegar sauce. I let it tack up for 10 minutes after I unwrapped them. So dang delicious.
Gotta love a smoker that doesn’t care what the temp outside is. I’ve got the thermal blanket on my pitboss at that has worked well for our MN winters.

I have stopped wrapping ribs. 1 & 3 only. Wrapping over cook. I do the bacon rain now instead.

@@AshKickinBBQ What you do, on the top grill, you built a roof of bacon, sliced 2 to 3 times thicker than what you find at the grocery. It allows you to cook few degrees higher without drying those ribs. Because those ribs are constantly moist by the fat of the bacon rendering and pouring on the ribs. The fat that you cut out of the rib, you put it there on the top of the bacon roof. Underneath the ribs, on a pan, you slice 8 cubing inches of shortening (pork fat) that will "evaporate" underneath the ribs, and absorbs the smoke. My ribs are around 1 inches above that shortening bath. If you still want to wrap, use that melted shortening instead of butter ... By the way, after 4 hours, smokey and sliced bacon taste awesome.

amazing...one thing i hate about doing ribs. is when i get them done all the meat just comes off while cutting.

Looks good but no smoke ring. Try this cook on the akorn auto kamado and it will be the best ribs ever with more flavor.
