Some folks don't realize how absolutely skilled one needs to be to roast a really good lechon. It is hard to get it right because the juices within tend to soften the skin. Even more impressive are lechoneros who roast more mature pigs which have naturally thicker skin and thicker layers of fat. They are able to get the skin crispy yet thin. Just incredible.

My favorite lechon experience was visiting the public market in Carcar, a town about an hour south of Cebu City. There are generally 4 or 5 vendors, each with loads of lechon, and there were several whole pigs to be seen. You could choose which part of the pig and how much you wanted, and they would chop it up right in front of you. So fresh and tasty. 😊

Guys, LECHON is really roasted pig. Someone thought to achieve that crisp by frying so LECHON KAWALI was born. "KAWALI" means frying pan or wok. Different taste but equally yummy. Dip may be the liver sauce (sarsa), vinegar, or catsup. Lechon is an excellent day-after food. Fry the leftover to crisp for breakfast..soooo tasty!
