I was probably 13 or 14... helping my mom. She chopped cucumbers and most the ingredients you had - referring to a recipe... no cabbage... called it piccalilli. Today, I'd say it was more like sweet relish. All I remember was dipping it out with a big tablespoon on my plate with almost every meal! BEST MEMORY EVER... helping chop/dice... this brought me back.
I have never made sweet relish, but I am going to try it. I also have arthritic hands and know what you mean. We had a citrus orchard in Arizona, and I used a small Oster juicer. It was under $20, worked like a beast, and takes up very little space. ( I brought it with me to TN). I also work in the gardens and prefer not to wear gloves. Research is showing that the earth strengthens your immune system, which is the culprit of arthritis. Take care sweet lady. 💕
I made this brine again and used it to make 4 bean salad. I did change it up a bit. I reduced the sugar to 3 c. and I added 1/2 c olive oil. I used 2 each cans/jars of black beans, red kidney beans, garbanzo beans, and green beans. Absolutely yummy of course.
Miss Lori, a recipe is just a guide. Mom and mr Grandma both said this. My Grandma used to get a whole bunch of green peppers. She would clean and slice the peppers. Then she used a 1-1-1 ratio. One cup vinegar, one cup sugar and one cup of water. Process for 10 minutes. My dad and myself would go there on a Saturday to repair paint or what ever she wanted done. She would have lunch meat sandwiches and she would give us each our own jar of those peppers. We would eat the whole jar. What memories we have. Thanks for sharing.

We have an over abundance of cucumbers, I've already made bread & butter pickles, given out a lot of cukes to neighbors & family, and still have cucumbers growing like wildfire!!! After seeing this video it gave me the idea of making your relish!!!! I have to say that you & Mr. Brown remind me of our closest friends that are no longer with us!!! Yes, I am 1of those people that doesn't care for sweet relish. I make dill relish that I absolutely love on almost anything and in my egg salad and mock potato salad using radishes in place of the potato, you can't tell they are radishes once you cook them, I also don't care for green peppers, I use orange, red & yellow peppers. I will be making this as I use a lot of sweet pickle relish too! I also find chopping vegetables therapeutic and my husband thinks I am crazy for not taking the easy way out…I always tell him I would really be crazy without this chopping therapy! 😂
Mt Olive makes a great sweet relish. I buy a 1/2 gallon jug of it at Sams for like $6. Takes me a good year to use it all. I keep it in my spare refrigerator.

I just made this today with an overabundance of Cucumbers we had coming in. (I TRIPLED the recipe) LOL! It turned out fantastic! Thank you so much for sharing the recipe and technique. It helped me tons! 🥰
I used my cukes that were to big for use as pickles. Even the big yellow ones. The yellow I peeled and quartered and then took a spoon and scraped out all the seed. I used a small electric chopper to dice them down after I cut them into small chunks. I soaked with salt as well and then hand squeezed out more of the water. It does compact the minced cukes. So when I filled the jars I only added enough to fill jars about three fourths full. Then added my hot brine to the jars. Then used a wood spoon to stir brine into the minced cukes in the jar. You will feel how it loosens the relish up as you stir. And helps to debubble. If more brine is needed you can add a little more. I used quart jars for my relish because we go through a lot of relish through the year. And then water bathed my jars for about 35 minutes. At the time I couldn't find a video for making relish. So I just made up my own way of doing it. Did not know to add onion and peppers. But it worked and they turned out well. And saved what little cukes we got from the garden because of high temps and drought.
My mind is filled with lemonade, backyard grilled hotdogs and yummy relish. I suppose you also live in firefly land, something we miss out here in the north west. Love your ability to stir up the summer eve nostalgia and glory days. Thank you once again, Miss Lori.

My grandma used to make zucchini relish. I cant wait till my cucumbers start producing because I"m making relish and bread and butter pickles.
I made this pickle but used Stevia rather than sugar, I got to cut my carbs. Turned out delicious.

I will be making this as I use a lot of sweet pickle relish too! I also find chopping vegetables therapeutic and my husband thinks I am crazy for not taking the easy way out…I always tell him I would really be crazy without this chopping therapy! 😂
Mt Olive makes a great sweet relish. I buy a 1/2 gallon jug of it at Sams for like $6. Takes me a good year to use it all. I keep it in my spare refrigerator.

Hi Lori, this is a fantastic recipe for sweet pickle relish. That’s a condiment for almost any kind of food. Using it a lot in summer, it’s worth the double recipe. Looks great. Thanks regards to Mr. Brown.🌷👍👍❤️❤️
I just made this today with an overabundance of Cucumbers we had coming in. (I TRIPLED the recipe) LOL! It turned out fantastic! Thank you so much for sharing the recipe and technique. It helped me tons! 🥰
I used my cukes that were to big for use as pickles. Even the big yellow ones. The yellow I peeled and quartered and then took a spoon and scraped out all the seed. I used a small electric chopper to dice them down after I cut them into small chunks. I soaked with salt as well and then hand squeezed out more of the water. It does compact the minced cukes. So when I filled the jars I only added enough to fill jars about three fourths full. Then added my hot brine to the jars. Then used a wood spoon to stir brine into the minced cukes in the jar. You will feel how it loosens the relish up as you stir. And helps to debubble. If more brine is needed you can add a little more. I used quart jars for my relish because we go through a lot of relish through the year. And then water bathed my jars for about 35 minutes. At the time I couldn't find a video for making relish. So I just made up my own way of doing it. Did not know to add onion and peppers. But it worked and they turned out well. And saved what little cukes we got from the garden because of high temps and drought.
My mind is filled with lemonade, backyard grilled hotdogs and yummy relish. I suppose you also live in firefly land, something we miss out here in the north west. Love your ability to stir up the summer eve nostalgia and glory days. Thank you once again, Miss Lori.
