Canning Dill Pickle Relish

  • Cucumbers in the garden are really starting to produce well. So many that we can't eat them all, so I decided to make dill pickle relish out of them.
    I doubled this recipe.
    3 lbs pickling cucumbers diced small
    1 large onion diced
    1/4 cup canning salt
    4 cloves garlic minced
    (in a large bowl for 1 hour then rinse)
    Brine
    3 cups white vinegar
    1/4 cup sugar
    2 tsp dill seed
    2 tsp mustard seed
    2 tsp Celery seed
    1/2 tsp Tumeric
    (I added 1/2 cup of salt to my Brine, altho the recipe doesn't call for it, taste before and you decide)
    (boil 10 minutes then add cucumber mixture and bring back to a boil for 10 minutes)
    Jar it all up, 1/2 inch headspace, clean rims, seal and process 10 minutes in a waterbath canner.
    4 pint canning jars, lids, rings.

    In the video I misspoke and said I added celery seed twice. Instead of dill seed and celery seed. Recipe is in the description.

    Thanks for sharing this recipe. We made jalapeno pickle relish last year and it was out of this world! Can't wait to make more this year! It's amazing you have garlic from last year! Congrats on that!!

      I hadn't ever thought about adding jalapenos to my dill relish. Even tho I nearly always add one in with pickles when I can them. Might have to give that a try. Thanks Rich @TheOldSwedesFarm

    Good Morning. I have never made pickle relish. I think we all should be making everything in my opinion. I love this. I hooe to get a large harvest of little picking cucumbers.     Thank you for this recipe. I will have to try it, Easy to make a small batch as a taste test, looks like a winner for hamburger and hot dog relish. I now make a sweet pickle relish with a brine that's equal parts by volume of sugar and vinegar and I like it. I use some red and green bell peppers in it and sometimes green tomatoes. I vary the spices, sometimes just grind up some allspice.

      We usually only have hotdogs when I've made homemade chili. Or if I have homemade chili left over frozen. One jar failed to seal. Wasn't the small one that tipped haha. I think it's time to have chili dogs.

      @tammykaltreider Thanks, and I hope you enjoy it if you make it. I did add salt to my Brine, because after rinsing, it didn't taste like there was any salt any more. I've used this recipe for over 10 years and I do something different every time lol

    Your recipie looks good! I will be substituting Dill.Weed, for the Seed, as that is what i have. I also make my actual Dill Pickles, with peppers in the jar.... So i think i will add a bit of yellow or red bell pepper for contrast. Thank you for the Recipe! Others leave out garlic, celery and mustard seeds.

    The written recipe measurements are half of what the video measurements are. Meaning, the video is double the quantity of the written recipe. The question I have is: on the written recipe and also in the video you said you added a half cup of salt. So in the written recipe should it only be a quarter cup of salt? OR, in the video did you add one cup of salt? I'm making it now!! Thank you!😊

    Could I use zucchini? I want to make zucchini relish but all the recipes are sweet relish and I was hoping for a dill relish using zucchini. Love your recipe!❤but I didn’t hear you say you added any dill.

      Yes you could, process time is the same for zucchini relish as it is for my pickle relish. Just remember if you are above 1000 feet above sea level that you have to adjust your processing time accordingly. In the first container I put in I had dill seeds and mustard seed.     Where is the dill you added 6 tsp of celery seed but maybe 3 dill and 3 celery

    I'm curious about the seeds being left in the cucumber. All the other recipes I've seen they have taken the seeds out. Apparently this isn't necessary. Good to know!

      If the cucumbers are large, then I split them in half and use a spoon to scrape them out, if the skin is thick I peel some of it off. Pickling cukes have very small seeds so it's not necessary. Any cucumber works though. I buy whatever is cheapest at the market for relish.

      @johnhanes5021 Yeah if it's a larger cucumber I sometimes will scoop out the seeds. But normally don't have to. I use whatever cucumbers I grow. Sometimes pickling, sometimes slicers. They both work.

    Just wondering in the video you said 4 tsp of celery seed and 4 tsp of mustard seed then you said after the tumeric and 4 tsp of celery seed so is that a mistake of is it 8 tsp of celery seeds??

      I usually wait a couple weeks but it tastes good when it's canned.

      Yes theres dill in it, at 4:25, she puts in 4t mustard seed, and 4t dill seed, she said it wrong you can see the dill seed in the bottom of the measuring cup👍
