In theory can you do a milk wash on any cocktail that has a citrus element? The milk is clarifying the cocktail by having oils or suspended solids bind to the proteins/fats within the milk. If so I’m guessing just to use the 1/4 ratio right?
If any other lactose intolerant people are wondering, yes lactose does end up in the drink during the milk-washing process, but lactose-free milk works just as well for milk-washing.
You want the curds in the filter... once the curds settle inside the filter then the remainder of the drink runs through it and this is when you get the clearest/best finished drink.
Basically, you can’t leave a dairy product sitting out for 18/24 hours. It will actually spoil and make you sick. Totally different than the induces curdling this method uses (which is just the milk separating into its different elements). So yes, if you plan on letting this cocktail clarify for any length of time you should refrigerate it.

What pineapple juice do you use? I can't find anywhere around me that sells proper pineapple juice since Woolies stopped stocking the one I used to use.
I use sailor jerry rum and it turns out pretty good, if you in a hurry and can’t wait for filtering overnight, use a coffee cloth net ( on amazon), you can squeeze it out of the net and can be done in 30 mins:)

Coconut milk, or coconut cream (the home made version at least) and fresh pinaple juice also crudle. Im currently experimenting with pinaple slices on a blender with the coconut cream and getting a very good result. My idea is to mix the rum later in order to have its full flavor and if the mix gets spoiled there is no preciouse liquor going through the drain

I believe any tropical drink involves rum and any fruity drink you can think of. Experiment first with white rum (coz white rums go easily with any rum-based drinks) and your favorite lemonade.
You can make other cocktails with the same technique :) Search clarified milk punch on youtube and you'll find other recipes you may like more than the piña colada
I saw some particulates in there. Good effort, but it should be see-through crystal clear imo. I do one run through a nut milk bag, one run through a box coffee filter on top of the curds in the nut milk bag, and one final run through a cone coffee filter right above a new box coffee filter. It's extra work, it takes forever, but presentation I feel is the most important part of milk punches.

One is macerated pulp, with lots of fat and not much sugar, the other is mostly water and a bit more sugar. I never would have thought of using one in place of the other... I can see the pina colada theme though, but I wonder if it would actually be better using the milk. Maybe the wash takes away some of the coconut flavour in the coconut milk? I found your recipe and PUNCH usually explains quite a bit of thinking that goes into each recipe, but this time they didn't seem to... BTW this isn't a criticism, just not something I'd have thought of. I don't think I've seen a cocktail using coconut water before. I have seen milk washes using coconut milk though, hence my confused rambling 😵🤣

Yep! You can milk wash any cocktail that has acid to cause the milk to curdle...

Hey Steve.. your measurements oz to ml is wrong .. 3.5 oz is 103.ml
1oz = 29.574ml... so yes, you're correct.... but for the sake of simplicity and common sense, 1oz = 30ml when making drinks.
