That is a good question. I did not need the acidity from the citrus as the combined alcohol has a high enough acidity level to make the milk solids separate. As long as your high enough acidity, when you add it to the milk it drops the PH level and begins to seperate.
That is a good question. If you are are allergic to dairy I would not drink this version as there is milk casine in it. But if you use a different method, like agar clarification, then it would be okay.

You don't have to dilute it first. You can clarify it first than dilute it. I chose to do it this way so that you could see the difference between the full Negroni and the clarified one.

There is no lemon required. However when it comes to lactose intolerance the sugars that a person is intolerant off are still there. You could however use Agar or Gelatin. I have not tried either of those yet. And I will make a point of doing it. Thank you for the question.

Its really good. you could try the cheese cloth you might have to strain it a couple of times.

You got that right an hour of vermouth. this is really good. If you make a big batch then when you come back you will have multiple drinks. :)
