Hi 😀 I've tried the recipe without deseeding the tomatoes and I found the final result a bit soggy (I also made it with canned tomatoes and resulted a bit watery as well) and personaly I really don't like the texture of the skins of the tomatoes in this dish. But this might be my own personal preference, in itself it's perfectly fine to use the tomatoes whole. I also tried cooking the ratatouille only on the hob and to me the veg resulted quite mushy, so I'd say overall this is the best method I found for making ratatouille, surprisingly it's not as easy a dish as it seems, it can easily become overcooked and bland. The use of fresh herbs and a bit of chilli flakes also makes quite a difference, I've tried with dried herbs and the flavour is not the same. Hope this helps, thanks so much for watching!
