In real life these fish were believed to be extinct at the point this movie takes place until they were later found to still exist. This means that the Whitmore has found them and brought them to his house several years before any scientist knew they were still alive.

It's honestly sad how the King went blind. At the beginning when his wife Kida's mother was taken by the crystal he moved Kida's head away for her to not look but he kept looking. And then it flashed a big immensely bright light which blinded him. So the last sight he remembers. Is his wife being taken by the very thing he was trying to control to make into a weapon.

Forgetting how technology works is actually quite common. I've heard that originally this movie was gonna be over 2 hours, and with a lot more lore and explaining. But Disney didn't think such a long 2d movie would do well. Maybe they were right but we would've loved it.
Disney does this thing where they sabotage films they don't believe the public will buy merchandise for. I would call it self-sabotage, but it doesn't lose them any money. It just tramples on the vision of their creative teams. They've also been known to neglect the marketing of a film they "think won't do well"... So, they basically *ensure* the film won't do well.

Forgetting how technology works is actually quite common. After the collapse of the Roman Empire nobody was taught how to properly maintain the aqueducts and eventually people forgot what they were and how they worked all over Europe.
There was a similar issue in the US a few months back. Remember that pipeline issue where fuel was not reaching the Eastern states? Basically the technology they used was compromised and when congress dragged the CEO in to talk to him they asked why didn't they just run the system manually which is possible and his response was that all the engineers that knew how to run the pipeline manually had either retired or passed away from decades ago.
Situations like that are common for a declining Empire.

Only around 10% of the kingdom or less was saved, it's possible a lot of scribes etc. were lost and in their attempts to rebuild they might have forgone written education, which lead to even more technology being lost as they could no longer understand the written instructions.
