Aw heck, I misread the thumbnail and was expecting an aquatic owlbear encounter. :) Thoughts inspired: Dolphin encounter - If the party is friendly and lacks Speak To Animals tricks, dolphin pod includes either a dolphin spellcaster or a shapechanged druid that has Speak To Drylander memorized and is willing to chat, maybe providing a warning or plot hook. Spooky mist encounter - would probably let a divine caster type use Turn Undead or burn one or more spell slots for an impromptu ritual to protect the crew, the party, or both if they're quick about it. Necromancer types might be able to do so as well, albeit with a very different feel to it - maybe they want to bottle some mist to experiment with? :) Island repairs/exploration encounter - having a few of the orcs attack the shore party while wearing crude ornaments made of beaten gold would be a good way to clue the players in to the prospect of there being gold inland, encouraging exploration and encounters with more orcs...maybe too many to handle. The gold vein might have already been found by the orcs and is being exploited by them, or maybe they found and tapped out another vein earlier and the players can still find an untouched deposit. If playing around with mining seems like too much trouble/delay, maybe the gold is found in a local stream/river and the orcs have been panning for it rather than mining. Deep blue deeps encounter - if only the players had run into dolphins earlier who could have given them info about what's down there. If they were hostile to the pod the speaker dolphin might offer to tell them of sunken treasure if they'll spare their fellows. If they were friendly, they also get warned about the horrible guardians down there. Either way they have a reason to go diving. Ghost ship encounter - if this stays friendly-ish, the ghost captain might give a token of some kind to the PCs asking them to use it if they spot the pirate ship they're seeking vengence on. Bonus points if the "token" is a random undead crewman's talking skull, unceremoniously yanked loose from their spine. Lighthouse encounter - if you want this to be a combat encounter, consider using shadow-themed enemies who have slain or imprisoned the keeper and are bent on keeping the lighthouse dark. Smart players should have an opportunity to relight the main lamp and use it against their foes. Pirate ship encounter - sure would be a coincidence if that talking skull you got from the ghost ship recognized the pirates and the players get some help from a ship full of angry undead as things seem darkest for them. Floating bones necromancer encounter - yeah, bones don't float, so that doesn't work great. Still, having the players just notice the harbor bed is covered in bones of all type should do, although you might need to handwave some necromantic preservation thing if someone also points out that bones don't last all that long in the ocean either. If they happen to have a talking skull of their own with them, maybe the necromancer can sense it and either mess with it or arrange to pursue the players to seize it. He would surely take an interest in any ghost ships in the area, so maybe the players could negotiate an exchange of info with him if he was too tough for them, or to get him to drop his guard. Black dragon encounter - this might be another thing friendly dolphins could have warned the PCs about at some point. Maybe they even offered a bounty of some kind (sunken treasure, future assistance) on the thing. It probably likes eating dolphins, that's a pretty evil-dragon kind of thing to do. Rich - excellent notes and treatment. Curious Owl Bear - I like the Black Dragon at sea encounter if located near a salt marsh or mangrove, but you could easily drop in a Green Dragon as well for a tropical island / atoll/ archipelago style encounter.

Gotta love how saltmarsh has tons of rules for running a boat/sea fairing game but almost never gives you a chance to use it as part of a quest. Also I'm definitely going to run an encounter where a ligth house just started shoot laser beams out of nowhere and it turns out it has been taken over by a beholder.
A young-adult black dragon nearly TPK'd our 3rd level party as we sailed home from repairing a lighthouse, by blasting our little trawler with her acid spray and then flying off, telling her kobold minions to finish us off. Well, we weren't having any of that! A fog cloud spell, some teamwork, and a few lucky breaks got us to shore, where we licked our wounds and plotted revenge. From there we tracked the dragon back to her lair, worked out a daring attack plan, and took her out. It was epic, one of my best experiences in a game ever. :)

These are some good suggestions! I imagine a giant squid would make good use of the grapple mechanic and might even have a swallow ability. The Roper might be a good starting template for a giant squid.
Are you going to give credit to Matthew Coleville and using the idea for Kalarel the Vile? ThE bones of the enemies tower sacrifice to Orcus idea is straight from one of his videos from running the game.
I was not planning on it as I do not watch his series, but I enjoy following him on Twitter. He is an excellent content creator and writer. When one describes a servant of Orcus, it makes a lot of sense to give them a certain affinity for humanoid bones and the undead
