Creamy Smoked Mac and Cheese Recipe | Fast and Flavorful Side

    Today I'm going to show you how to make this incredibly creamy and delicious Smoked Mac and Cheese! Although Mac and Cheese is typically a side dish, this recipe just may be the star of your dinner! With a little prep work and a relatively short cook, you can really impress your guest with this recipe. Oh, and if you don't have a smoker, no problem! You can cook this in the oven!
    •RECIPE•
    •Cheese Sauce:
    -Grate 1 lb Block of Extra Sharp Cheddar and 1 lb of Gouda Cheese. Mix together.
    -In a low heat pot, mix 1 stick of butter and 2 cups of heavy cream and let it get nice and hot.
    -Then add a can of Campbells Cheddar Cheese and whisk until it thickens.
    -Turn the heat off and slowly mix in shredded cheese. As it thickens you may need to add some additional milk. For my recipe, I had to add an additional 2 cups. (Save some shredded cheese to top our Mac with later)!
    -To the sauce add 1tbsp salt, 1tbsp, black pepper, and 1tbsp paprika.
    •Noodles and Assembly
    -Boil 1lb of dry Elbow macaroni and let it cook until it is almost done. Once they are done, shock them in the sink by draining the water and running cold water through the noodles. This prevents them from continuing to cook.
    -Slowly mix the sauce in with the noodles.
    -In an oiled cast iron pot, mix in your Mac and Cheese and top with remaining shredded cheese and add a 1/4 cup of shredded Parmesan, crumbled bacon from earlier, and some paprika for color.
    -Place the Pot on a 300°-325° Smoker of your choice for about 45 minutes to an hour or until the top is nice and bubbly and has a nice crust!

    My wife and I have formed a borderline obsession with smoked mac and cheese since the first time I did it. The one thing I thought didn't turn out as well was the creaminess factor. Ours wasn't dry or anything, it just kinda stuck to the noodles. It didn't do that little "slow spread" thing you like to see when you ladle it onto the plate. I've watched several videos on how to improve that, and I think yours was one of the most unique I've seen as far as the tips you offered. I made a roux the first time and had already decided I simply needed to either use heavy cream or just add more milk. But the cheddar cheese soup idea was borderline genious, lol! Great video man. I love to watch a recipe that actually teaches me a new tip. Keep rockin'!

    What temp is the smoker set at for the bacon? And do you keep it the same for the mac & cheese?

      I have the smoker going at around 300°-325° for the bacon and the Mac and Cheese.

    FYI. Pre shredded cheese is dusted with wood dust. Always use freshly grated cheeses.

    You lost me a canned cheddar cheese. 🤮 don’t emphasis the importance of grating block cheese and the descend to using a can of cheese. A rue is the way to go. Add the flour to the butter then thicken with milk.

      @@brittmeeks4599 after reviewing my video, you are correct, I did not make an official roux. My apologies! I asked my wife why she likes using the cheddar cheese as opposed to making a roux and she said:
      -The cheddar cheese will help make the Mac and cheese more creamy, just like a roux, but will add an extra layer of cheesiness.
      -When we make Make and cheese in bulk (we do a lot of bbq catering) it’s much easier to use this way.
      Hopefully this explains a little more of the reasoning. Cheers!
