- The Best Smoked Mac & Cheese | Pit Boss Lexington 500
Smoked Mac n Cheese Ingredients
Boil and flash with cold water when mac is tender
1lb Elbow Mac
Cheese Mix
4 TBPS butter
2 TBPS Flour
1lb Sharp Cheddar Cheese Grated
1lb Mozzarella Cheese Grated
1 cup Buttermilk
1 TBSP Creole Seasoning
1 TBSP pepper
1 Tsp onion Powder
1Tsp Garlic Powder
2 TBSP Chive and green onion Cream Cheese
1 TBSP Sour Cream
Salt to taste
Cook 1lb of bacon to top mac n cheese
Slowly melt 3/4 of cheese once cheese becomes sauce like incorporate it with the mac
If cheese mixture becomes too thick just add more milk to thin
Smokin' Directions
Set Smoker @ 350 degrees Cook for 45 Mins
Add Rest of Grated Cheese and Bacon and let mac n cheese smoke until desired color of cheese or until cheese is fully melted

I'm just coming back to let everyone know that this is the best mac and cheese I've ever had. I've made this on two occasions now. First, I catered for 175 and made 8 trays of it. I made 2 trays this past weekend for a graduation party, and it was gone in 15 minutes. I get nothing but rave reviews about this mac and cheese. I love it because it's like nothing anyone has tried. They have never heard of it being smoked. It's a wow factor dish, and i HIGHLY recommend it. Thank you so much, sir!!

Dang I just got a smoker and I’m a super noob but I’m gna try this for Easter man ty. Looks so good I’ll let u know how it goes. What type of noodle are those and u say once your done cooking them on the stove, you run it under cold water real quick before mixing in the cheese sauce and smoking ?
What’s up fam! Congrats on the new smoker. Those were elbow pasta and once you cook them Al dente shock them under cold water to stop them from cooking because they will cook further in the smoker and it will prevent them from becoming mushy. @AuthenticBenny mostly the pellet grills are more of convenience but still turn out some good food, but overall flavor charcoal and offsets will beat them hands down.
I think they are good to have in your arsenal for days you don’t want to manage the fire but still want something on the grill/smoker.

Man, my cheese mix didn’t turn out like yours. Mine was thick and one big blob. Maybe I added too much cheese too fast. Idk.
No worries add a little more milk and it will thin it out. But adding too much cheese too fast may have been the culprit. Don't give up. You got this!

You can substitute with whole milk. May not give it that full flavor but still will get you in the game. Have you tried any convenience stores some times they may have some. I hope you can find some!
