  • There's probably no one who doesn't like pork back ribs, right? ^^
    It's been a long time since I bought enough and boiled it deliciously.
    The pork back ribs are amazing. Even if you're full, they're not greasy until the end and stick to your mouth.
    It's a little spicy back ribs with red pepper powder and red pepper paste, but it's deliciously spicy.
    If you make this braised pork back ribs, you will automatically think of a cooler beer than rice.

    Braised back ribs (4-5 servings)
    [Ingredients]
    2 to 1.5kg of back ribs
    1/2 cup of soju
    1 tablespoon of whole pepper
    five laurel leaves
    10g of ginger
    [Seasoned]
    1+1/2 tablespoons of red pepper powder
    1+1/2 tablespoons of red pepper paste
    2 tablespoons of minced garlic
    2 tablespoons of ketchup
    2 tablespoons of oyster sauce (=dark soy sauce)
    3 tablespoons of cooking wine
    4 tablespoons of starch syrup
    a tablespoon of sugar
    1/2 teaspoon of minced ginger
    3 cups of water
    [How to make it]
    1. Remove the membrane by gently tearing off the edges.
    2. Cut the flesh between the bones with a knife and separate them one by one.
    3. Cut off the oily part and remove it.
    4. Dip the back ribs in cold water to drain the blood.
    5. While changing the water, take it out for about 30 minutes and sift it through a sieve.
    6. Pour enough water (about 10 cups) to soak the back ribs, add 1 tablespoon of whole pepper, 5 laurel leaves, ginger, and 1/2 cup of soju and boil them.
    7. Add back ribs and boil them for about 5 minutes.
    8. Wash thoroughly and roughly remove moisture while scanning for impurities attached to running water.
    9. Mix all seasoning ingredients except water, then add ribs and mix evenly.
    10. Marinate it for about 30 minutes so that it gets seasoned.
    11. Pour 3 cups of water and boil it, lower the heat to medium heat, cover and boil it for about 20 minutes.
    12. When the meat is softened and the soup is reduced by half, stir it over high heat and boil it down.
    13. It's done when it's patiently marinated so that the seasoning sticks to the back ribs.
