That is quite an interesting comment. Ramsey is a great chef, but he really should know by now what is an authentic dish and it's ingredients. I'm fully okay with the names if he calls it his interpretation of the dish, but not so much if he's calling it the actual dish.

This and tom yum are my favorite dishes from Thailand. Back when I was an intern there, we often ate that, but since Filipinos don't usually eat spicy food (I mean, we eat spicy food but not as spicy as other Asian countries like Thailand and Korea), we only ate with little or no chili pepper at all. I can eat it with one or two chilis in it and it's already so spicy for us since the chilis, along with the other ingredients, are pounded with the mortar and pestle. But I cannot eat that with the Thai amount of spiciness. I just can't. I was amazed by how my co-teachers and students can eat that level of spicy, even spicier than Korean cuisine that I often eat.
I miss Thailand.

Som Tum is one of those foods where you can make it into many different version by changing some of its ingredients such as salted crab that Uncle Roger like, or maybe fermented fish that's generally popular in Thailand. Some even use corns, noodles, salted eggs, pork sausage, etc. So I can tolerate Gordon making this.
Though, I can tell just by looking that his version going to taste sickly sweet as hell. To make that one chili works, you gonna need to pound it to dust. And even then, you could probably barely feel it.
FYI, in Thailand (at least where I live) 5 chilies is a bare minimum. Those who really love spicy Som Tum would just throw a handful of chilies in without counting.

As a Thai who love Som Tum, I can say that Gordon makes papaya salad more complicated than it should be. We don't put basil in som tum, and although you can put carrots in it you don't have to. Also, we don't put "dressing" last, we don't even call it a "dressing" because in Thai language "som tum" doesn't mean "papaya salad", so in our mind it isn't even a salad but a main dish eat with sticky rice and other meat dish as an optional add-on. We don't add the juice later on, we actually make the juice as you stir the papaya in the mortar, with the exception of grinding garlic and chili for a little bit first before adding the papaya, lemon juice, fish sauce, etc. There are more than one type of som tum depending on the region of Thailand. The north-eastern part of Thailand is close to Lao and have Loa's influence in the dish and is my favorite. The typical som tum you eat in the USA is from the central part of Thailand.

The best "som tum" "tum lao" I had was in Vientiane, "sai pa dek" .. I notice for lots of Woman, eating "som tum" everyday is like a religion :) most people like "tum lao" more than "tum thai" I used to bring "geo pa dek from Lao to Thailand, for all my friends.. for me it's to spicy now.. :)

also just because you sprinkle peanut in the food or add peanut sauce in it and call it Thai. Not every dish in Thailand uses peanut. That's one of the pet peeve I have as a Thai person coming to the US

Damn the ones made around here must be authentic then. There's little crab claws and those beans and the sauce is thin and they use about 20 chilis(if it doesn't make you cry it's not enough!). I love the papaya salads at the Hmong restaurants here in central Wisconsin.

I live in Thailand, and you do get street vendors that will sell papaya salad with the tandarind in a kind of paste but it is rare. The crab is rice tradionally a rice paddy crab which is just adds a fermented flavour to the papaya. It is meant to be a cheap crunchy salad with a spicy fermented salted and sweet flavour. Gordon is close enough with British ingredients but tomotoe would be nice.

There are many types of Somtum according to local areas.
Tum Laos : papaya salad with fermented fish (It's the original papaya salad)
Tum Pu Kem: Papaya salad with salted pickled crab. (It's papaya salad that uses salted crab instead of fermented fish. because there are no fermented fish in the seaside area)
Tum Thai : Royal Thai style papaya salad. It has a sweet taste. The taste is not as strong as other types of Somtum. Dried shrimp and roasted peanuts are added instead of fermented fish.
Tam Sua : is to put Kanom Jeen (rice noodle) in Tam Laos.
Tum Korat : A mixture of flavors of Thai and Laos Tam. That is Thai papaya salad with fermented fish (Korat is a province in the middle of Thai and Lao cultures. So we call it Tam Korat)
There is also Tum pickled mussels, Tum Mua, Tum Seafood, Tum Salted Egg and Tum local fruit (Banana, Star fruit, star gooseberry, Noni)

Gordon mixed up 2 Thai dishes. He's mixing Som Tam with a Thai dipping sauce called Nam Pla Wan (sweet and spicy fish sauce) which we use for dipping with sour fruits. So his dish came out as a new fusion dish. And in Som Tam there's no Thai basil... Neither does the dipping sauce. 😮💨
i was confused why the dried shrimps were pounded so much and the ingredients looked like a paste. that explains why it looked different from what i was used to. it looked a tinny bit of the dish with the deep fried fish but the salad to go with it was a mango salad i believe (forgot what the dish was called).

Pad Krapao 🤪... Can't go wrong with that! 😂Then you can learn more intricate dishs with time and patience. I try not to cook Thai food. Too many ingredients and you must balance each one delicately. It's an art form for me 🙄...
