Actually for traditional tonkotsu ramen, thin ramen noodles are used. As a rule of thumb, if the broth is rich and salty, thick ramen noodles are used. If they are light, thin ramen is used. Thin noodles are used to increase surface area while thick noodles are to decrease it, and this is how noodles are used to control how much broth you take in with your ramen.
I am amazed by how accurate Uncle Roger's knowledge of Japanese cooking is, cos there's actually lots of differences between Chinese & Japanese food culture.

I have to say, the last time I was in Osaka, I went to a ramen shop right near Morinomiya Station that used roasted pork rather than braised. It was freaking amazing.
Then again how often do u need a smoker and where would u put it if u had one. Even in my house we don't have rice everyday but our rice cooker is still used a lot
You can find cheaper rice cookers. But honestly if you eat a lot of rice it's worth dripping a couple hundo for a nice one. And unlike a smoker they don't take up any space at all!

You know, smoked chashu (that smoke ring yo!) is a path I would like to see more Japanese Ramen Chefs try. Depending on the wood used, it could impart some pretty amazing flavours, and smoked meat is also very tender!
Cherry wood would be my initial thought. Works well with pork in general and the slightly sweet aromatic it imparts should meld well with the other flavors in the ramen.
