    Dough:
    • 3 egg yolks
    • a pinch of salt
    • 80 g (6 tablespoons / 2.8 OZ) powdered sugar
    • 80 g (1 stick) melted butter
    • 1 teaspoon vanilla
    • 200 g flour
    • 1 teaspoon Baking powder
    Filling:
    • 3 apples, cut into cubes
    • 40 g (2.5 tablespoons / 2.4 ounces) sugar
    • 5 g (0.5 tablespoons) corn starch
    • Juice of 1 lemon
    Cream:
    • 500 g Greek yogurt
    • 3 egg whites
    • 50 g (4 tablespoons / 1.7 OZ) corn starch
    • 1 teaspoon vanilla
    • 3 protein a pinch of salt
    • 130 g (0.7 cups / 4.5 ounces) sugar
    Process:
    1. Pre-heat oven to 180c
    2. mix 3 egg yolks, pinch of salt and 80g powder sugar.
    3. Mix in 80g melted butter and 1 teaspoon vanilla
    4. Sift in 200g flour and 1 teaspoon baking powder, use silicone spatula to mix into a pastry. Cut off 1/3 and place in freezer.
    5. Peel and cube 3 apples, mixing in juice of 1 lemon and 40g sugar and 5g corn starch
    6. Add apples to pan to caramelised light gold.
    7. Line 20cm baking pan/tin with the pastry, covering the bottom and almost to top - leaving around a cm
    8. Add apples and level out
    9. To a large bowl add 500 g Greek yogurt, 1 teaspoon vanilla and 50g corn starch - mix well
    10. In a separate bowl add 3 egg whites and pinch of salt - beat until foamy, then gradually add 130g sugar until stiff peaks
    11. Add the eggs a 1/4 at a time to the yogurt - folding as you go]
    12. Place meringue mix on top of apples
    13. Grate the 1/3 frozen dough on top of the meringue to cover the top
    14. Bake at 180c for 40 mins
    15. Top and pastry should be dark golden
    16. Sift powdered sugar over

    I made this delicious treat but I took the skin off my apples and added cinnamon, nutmeg, and allspice I thought about adding cardamom and ginger but I thought it might be too much for the kids. The guest LOVED IT! Thanks for sharing the wonderful recipe with us.

      Both. After the oven though it's pretty hhot, especially the filling, let it stay in the room for at least one hour, and then off you go!

    This looks really good and will definitely try this recipe soon. But I wonder though, might be stupid question, but can I use lemon pudding (as in the one used for lemon meringue pie) at the bottom instead of apple or cherries?

      I frequently take the parts that I like from multiple recipes to create something new. The lemon pudding sounds like a great idea to me! Just my opinion:)

    You messed up the filling. All that brown at the bottom of the pan was the starch and sugar drying out and sticking to the bottom. You needed to add the starch after you put the apples in the pan, and after the apples released a bit of fluid, to thicken without excessive sticking.

      It’s ok to add the starch even before cooking the apples in the pan as long as the pan is not yet super hot. The pan was already super hot when the apples were poured in the video, hence the residue. But that’s ok. A bit of water can always be added. It will evaporate anyways.

    Just done your cherry version, very nice cake, just needs more flavour in the meringue part. some people commented that using Bundt tin works okay. Well, I will correct these bakers - it doesn’t work as well because a Bundt pan is smaller at the base, larger at the top, whereas for this cake you need almost equal circumference across the height. So please do stick to the container that shown in the video. Also adding less corn starch to the cherries - also a very wrong advice, the jelly cherries are meant to hold up the rest of the cake, so this mixture must be stiff enough.

    I followed the recipe to the letter and it turned out looking just like in the video; but for the amount of work, I was a little disappointed… an OK dessert, but neither a really good cheesecake, nor a really good apple pie. The kind of recipe one think should be changed into something better. Sorry ! 😕
