I frequently take the parts that I like from multiple recipes to create something new. The lemon pudding sounds like a great idea to me! Just my opinion:)
You messed up the filling. All that brown at the bottom of the pan was the starch and sugar drying out and sticking to the bottom. You needed to add the starch after you put the apples in the pan, and after the apples released a bit of fluid, to thicken without excessive sticking.
It’s ok to add the starch even before cooking the apples in the pan as long as the pan is not yet super hot. The pan was already super hot when the apples were poured in the video, hence the residue. But that’s ok. A bit of water can always be added. It will evaporate anyways.

Just done your cherry version, very nice cake, just needs more flavour in the meringue part. some people commented that using Bundt tin works okay. Well, I will correct these bakers - it doesn’t work as well because a Bundt pan is smaller at the base, larger at the top, whereas for this cake you need almost equal circumference across the height. So please do stick to the container that shown in the video. Also adding less corn starch to the cherries - also a very wrong advice, the jelly cherries are meant to hold up the rest of the cake, so this mixture must be stiff enough.
I followed the recipe to the letter and it turned out looking just like in the video; but for the amount of work, I was a little disappointed… an OK dessert, but neither a really good cheesecake, nor a really good apple pie. The kind of recipe one think should be changed into something better. Sorry ! 😕
