How to Make Nesselrode Cream - The Victorian Way

    It's Christmas time at Audley End House, and Mrs Crocombe is making a Victorian Christmas favourite - Nesselrode Cream. It's an ideal winter sweet, and if you aren't fond of plum pudding then this may be for you.

    INGREDIENTS
    Water - 100ml / 3.5floz / ½ cup
    Caster Sugar - 200g / 7oz / 1 cup
    Chestnuts - 200g / 7oz / 1 ¾ (cooked)
    Gelatine - 9 leaves or 3 tbsp powder
    Double cream - 565ml / 20oz / 2 1/2 cups
    Vanilla - essence/extract (or a split pod)
    Lemon - The peel of 1 lemon
    Cherries - 60g / 2oz / 1/3 cup dried & chopped
    Candied peel - 60g / 2oz / 1/3 cup chopped
    METHOD
    Start by greasing your mould with almond oil. Boil the water with 100g / 3.5 oz / ½ cup of sugar and add the chestnuts. Reduce by a third. Add the chestnuts, and simmer for 5 mins. Remove from the heat and allow to cool a little before passing the chestnuts through a sieve. Cool thoroughly.
    Soak the gelatine sheets in cold water until soft. Put half of the cream in a pan with the rest of the sugar (reserving 1 heaped tbsp for later), as well as the vanilla and the lemon peel. Bring to a low simmer. Add the gelatine sheets, having squeezed out the water, and mix. Simmer for 5 mins to infuse the flavours and strain into a jug.
    Whip the remaining cream with the reserved tablespoon of sugar until you obtain soft peaks. Put the chestnut puree into a cold bowl, add your infused cream and gelatine mixture and mix well.
    Now fold in your whipped cream, and finally your dried cherries and peel. Pour the mixture into your mould and set in the fridge for at least 6 hours before turning out.

    As always thank you to our viewers for your support. We’ve compiled some answers to frequently asked questions regarding this recipe below. If you try Nesselrode Cream yourself at home, we’d love to hear from you.
    DID VICTORIANS HAVE VANILLA ESSENCE?
    Yes, they had vanilla essence. Essences of all kind were widely available, both artificial and real by 1881. Vanilla was a relatively modern flavour in Britain - many cooks still used orange flower water as their go-to flavouring.
    WHY WERE PINEAPPLES FASHIONABLE?
    Pineapples were still expensive and relatively rare, and Jim Dole had not yet founded the Hawaiian company which would make them - eventually - ubiquitous. Many country houses grew them in heated glasshouses, and they were also imported from overseas. However, there is absolutely no truth in the rather bizarre rumour that the Victorians rented them. They were also a sign of welcome (sometimes confused with pine cones, an earlier and also common symbol in architecture etc).
    WHAT CAN I USE INSTEAD OF CHERRIES?
    The cherries here are dried, don't use fresh or tinned, and try to avoid glacé unless you really cannot get hold of them dried. You could probably use cranberries, but try to get them unsweetened.
    WHY IS THIS SET CREAM MORE SUITABLE THAN AN ICE?
    In 1881 the Braybrooke’s had quite a small family - just Lord and Lady Braybrooke, as their daughter had married and left home. While they did entertain around Christmas, they were not lavish hosts, and this is a more muted and slightly cheaper dish than the iced versions. However, if you do want to try the iced pudding, the original recipe was written by Antonin Carême and is widely available online.
    WHAT CAN I USE INSTEAD OF GELATINE?
    You can use a vegetarian substitute, following the instructions on the packet. The secret to this, as with any set cream or jelly, is to make sure that all of the ingredients are chilled, and that you allow your cream to cool to room temperature after adding the setting agent, so that it is just starting to set before you add it to the other ingredients. As Mrs Crocombe says, if your mixture isn't thick, then the fruit will not be evenly distributed.
    WHERE CAN I GET A CERAMIC MOULD?
    You could look in junk shops and antique shops - try and get one which is in reasonable condition and you can use it for steamed puddings as well. To use for this, make sure it is greased well (vegetable shortening is ideal). You can also use a glass, metal or plastic mould, or a simple basin.
    WHAT IS ANGELICA? SHE USES IT A LOT!
    Angelica is a plant, which can be used as a herb, or the stalks can be candied. They taste lovely and were very popular in the Victorian era.

      In the recipe, it says 9 gelatine leaves. Is this a typo? If you use NINE gelatine leaves it will be harder than a house brick. Surely THREE sheets will be more than enough as you are only using a pint of cream.
      Please advise.

      @@maritrekkers4392 All the sheets of gelatine I've ever bought and used are the same size. I'd be interested to know if anyone has ever made this and used 9 sheets of gelatine. How did it turn out? I'm planning on making one of these on Christmas Eve so I hope someone can clarify the correct amount of sheets.

      UPDATE : I have just found a very similar recipe for this dessert and it says to use 4 sheets of gelatine which is more like it, though I feel it will be a very firm set, almost chewy, maybe 3 leaves of gelatine will do. I am going to do a 'dummy run' and make one tomorrow using four leaves and test how firm the finished dessert is.

      that's actually a historically accurate detail - pineapples were rare and exotic in Europe and therefore very expensive. High Society people rented them for the night as decorations to show off their wealth to their guests

      Liam Lowenthal There was a massive pineapple craze when they were first discovered. Head gardeners were given vast budgets to build pineapple houses, heated growing beds and greenhouses in order that they could produce fruit for their employers to show off. Pineapples started popping up everywhere- stone pineapples on your gate posts were popular, or adorning the balustrades around your terrace, even on the roof.

      In British English, whenever a word ends on a vowel "VanillA" and the next immediate word starts on a vowel "extract", there is a "binding-r" that's introduced to make pronunciation more fluent. "vanilla-r-extract". This idea-r-is not half bad.

    Made this recipe for my Christmas . Except for the cleaning of the chestnuts it was an easy recipe, and went together very well. My family and I really enjoyed it. It has a very nice balance of flavors. Thank you for the recipe 😊
