How to Make Pigeon Pie - The Victorian Way

    The shooting season is well under way at Audley End House, which means the guns will need a tasty lunch on the go. Thankfully, Mrs Crocombe knows how to make a filling pie that is a spectacular way to use up all of those pigeons.

    INGREDIENTS
    12 pigeon breasts
    450g mushrooms
    A few truffles
    12 quails' eggs
    Salt
    Pepper, cloves and mace
    Herbs (try parsley, thyme and sage)
    1 glass of port or madeira
    1 glass of whiskey
    Stock, with some melted gelatine
    For the pastry:
    700g flour
    3 eggs
    225g salted butter
    For the forcemeat:
    Veal mince
    Cooked ham
    Breadcrumbs
    METHOD
    To make the pastry, mix the butter, eggs and flour together with enough cold water to make a paste. Set it aside to chill for around 30 mins.
    Once ready, don't roll the pastry out - instead, make a rough pyramid shape before pressing into the top with your fingers. Then, place the pastry inside your mold and ease out the sides. Any excess can be cut off and put aside for later to decorate the top.
    For the filling, mix the veal, ham and breadcrumbs together, before lining the walls of the pie. Layer up the mushrooms, pigeon breasts, herbs, truffles, quails' eggs and spices as desired. Repeat until the mold is filled, and finish by pouring in the liquids.
    Roll out the rest of the pastry to make the lid. Place on top of the mold and cut off the excess. Use a pastry brush to seal the joins with egg yolk, and make an air hole in the top to allow steam to escape when cooking. Use the excess pastry from earlier to decorate the pie.
    To cook, place in the oven for around an hour and a half at 180 degrees. Once cooled, pour in stock mixed with gelatine to help solidify the mix. Serve with a garnish, such as a bed of watercress.

      Hey, they did the same thing with their clothing. English women were into decorating their hats with entire bird carcasses at one point, I believe Victorian or Edwardian.

    The only thing that's missing to make it perfect is the pigeon's head sticking out in between the feet. That's how they'll definitely know it's pigeon and not chicken😂😂😂.

      Truffles were much more common and popular before WWI wiped out the vast, vast majority of truffle farmers. They were eaten by people of all classes in Europe in the late 19th century.

    As someone who has made this after watching the video, I can say it's actually pretty good. I didn't add the feet, though. It's great for a cool day, though I ate it hot rather than cooled. I tried it after it cooled and it was better warm.

      Kathryn shaw : it's a mushroom growing on tree's roots. It's very expensive given it's not common (not extremely rare, but still, it's very unlikely that you stumble upon one). It is suppose to be very tasty, I had some once, and I didn't liked it ^^ It is used in luxury cooking mostly, but you can have truffled cheese or dried sausages. But I think the ones Mrs Crocombe is using are jarred truffed given they weird aspect...

    Tried to make this and it didn't go well. Those pigeons are fast even when i remained still and used the best bread crumbs. After 2 days and no rest, i was out of breath and collapsed in the park when they then decided to mock me, circling going "rooo" "roo" and bobbing their heads in content they won over me. Now i am missing both the port and the madera, i had to drown my sorrows. PS: Chickens eggs are easier to get than quail eggs!!! Those little ones bite really hard.

    It's a modernized version of course. Traditionally small birds like pigeons were used with bones, since boning them individually before cooking was too much work, and after cooking it's much easier anyway.
    Also the crust she made is a lot closer to modern pie. Crust was basically a tough doughy paste used as a container, not meant to be eaten. That's where the word "pastry" comes from. It was so tough and thick it would stand on its own without the need for support. This step in building a pie was called "raising the coffin"

      Aside from the gelatine she put in there, I'm fairly sure its done. They didn't know about carryover heat back then, just to 'let the pie cool', before cutting into it so the stuff didn't gush out everywhere. Also, eating pigeon or, squab, you couldn't overcook it or it would taste like ass. You have to cook it just slightly rare--slightly underdone, to retain moisture. If its dry, again, it's gonna taste like ass and be tougher than old leather.

      Oh my yes. Victorian and Edwardian era food and eating habits for the wealthy were heavy, giant opulent meals that happened 3 or 4 times a day and it was totally normal for the men to consume 5000 calories and die at age 45.
