Based on the leaked bible, the quality of the test animation, and Kopp's track record, it sounds like it would've been a really fun show with old-school Saturday morning energy, and as a late bloomer Crash fan, I'm super disappointed it got the axe.
Here's a cancelled ('cancelled' by your loose definition) cartoon I know about: there was a toy line in the 1980s called Robo Force that was going to have a cartoon series to promote it. They made and aired the pilot episode 'Robo Force: The Revenge of Nazgar', but it never got picked up for a full series because other cartoons/toys like The Transformers overshadowed it big-time.
