jeremypascall thx for your comment. Never saw it in my late grandmother’s cooking nor my mom’s (now 90). It was fresh garlic always. My late grandfather even hung garlic braided with the “scapes” from the basement rafters. Don’t even have the powder in my home. But to each his own.

italians use it quite frequently. its the same as with dried or fresh rosemary: whatever suits the purpose!

Why so many eggs for a pound of meat?
It's not 1 pound, it's 1 kg.
It does seem a lot but it assures that the meatballs won't crumble while you're cooking them.
