I’ll be honest you’re the first guys I’ve seen try the actual broth/boil! I think out of all the crawfish videos I’ve seen I feel like this is the right way to make. Once crawfish season comes around I’m definitely using this recipe

Man my mouth is watering over here. EXCELLENT video, I learned so much and I thought I knew a little something about cooking crawfish. The one thing that I have to try immediately is the sweet potato. I never seen this done before. I know that is a unique taste that is probably so good. Also, I never considered puree the celery and the onions. I normally cut them up, but I like your way. Continue to make great videos!!! Now can you please email, dropbox, send by carrier pigeon, blue jay, or turtle dove me a bowl or two of them mudbugs? Lol
Almost without words to say on this one. Ya'll just go find something else we can tho in this pot. lol The hot spices, sauces, mo hot spices, mo hot sauces. lol WOW. This makes our little SC low country boil look like a plate of bland potatoes. lol That is amazing equipment and the way to go. One day I may get brave and try something like this. Ours has shrimp, sausage, new potatoes, and corn. The main difference are the spices and hot stuff and secret ingredients. lol And of course the Crawdads. I've never had this, but sho would like to try it. Enjoyed watching Rus. That was a GOODERN.

Phil N Florence Crawdads/Crawfish are delicious, I live in California and there’s a little town on the delta near Sacramento called isleton and they have an annual crawdads festival that’s HUGE! The whole town is involved. They have crawdads from the south, and locally. Also gator, shrimp, just about everything u could want. My advice is if u have a town in your state that does this go do it, you’ll have a BLAST! and see if u like the little “Mudbugs.” Good luck. 😁

Those were all friends of my sons. They bought a second sack of crawfish which we boiled right after finishing the shooting of this video. I guess I should have saved some for my policeman neighbor to keep him on my good side lol. Actually there is a empty house right beside me. The owner has been working on it for the past 3 years and still isn't finished lol.

I’d like to see you try doing the Vietnamese Cajun (in a plastic bag with a sauce, typically butter and garlic with spices) crawfish. Boiled and soaked as normal, just add the sauce.

Dang Rus! I'm from Metairie and I love a good, spicy crawfish boil. I never have pureed the onions and celery, I may have to give it a shot. I've only got an 80qt pot, but it'll usually cook a sack with no problem. Thanks for the tips!
Pureed onions and celery really gets that flavor in the mix, and you don't end up with onion petals all in the boil either. It's a good trick for sure. Yeah, I also have a 80 quart pot and it does one sack of crawfish and fixins with no problem at all. Thanks for checking out the video, we appreciate it!

Green beans are pretty good in a boil. We should have added them when we added the corn. About 6 minutes is all they need. I've been doing the mushrooms in my boils for at least 20 years. Love the way they really suck up all the seasonings from the water. Thanks, I appreciate you watching!

You guys should look into some brewing equipment. Research an "emersion wort chiller." It a coiled up copper pipe; cold water in, hot water out. It works a bit faster, but I love the design of the boil boss. Cool!

Out here in California Crawfish aren't as popular as many other places, but I was introduced to them when I was young by a neighbor who'd lived in Texas most of his life and would serve 'crawdads', as he called them. I've taken every chance I get since then to cook and eat them when they're available. But clearly I need a bigger pot :)
Hey Ry, thanks for checking the video out! Naw, you can do them on a smaller scale and use a much smaller pot. I've done them on the stove top plenty of times back in the day. Not as good of results but no one spit them out either lol! There is a place in California that contacted me a few years ago and if I remember right, the name of his crawfish business was "California Crawfish". You may want to check it out.

I'm not sure where you live, but I know they sell it in a few stores in south Louisiana, and I think Rouses carries it as well. I know they carry some of the sauces and seasonings but not sure about the boil mix. Maybe you can contact Keith through the website and find out exactly who carries it. I really don't know

That is my personal favorite way to do crawfish, but the majority of people prefer this method since it's the original way to cook crawfish, so that's what we decided on for this video.

Hi there! Quick question for you. How many people will this feed? Will be doing my first boil and curious how much to prepare.
Really depends on who your feeding lol, but we did two sacks total and it fed around 15 people. I would figure around 5 pounds of crawfish per person with the sides. The 5 pounds of crawfish after being headed and peeled with render around 1/2 pound of meat, so that with plenty of sides and cold beer should fill them up ;)

You can order them online and shipped to your front door so you know, but I hate to even know what that would cost, but it is a option if you ever want to do a boil.
Liquid boil is derived from the same ingredients used for a powdered boil mix, but is concentrated and very powerful, so if using indoors in a smaller pot only a cap full or two is used. In a 160 quart pot like we used in this video, about 2 cups is needed. It really intensifies the over all flavor for a crawfish boil that is sure to have plenty of flavor. It carries a little heat but most of the heat and spiciness in a boil is controlled by the amount of cayenne pepper added, and in this cook we also added the jalapeños and pepper sauce. I never add butter into my boil. People claim it makes them easier to come out of the shell, but if they are cooked properly they will come right out of their shells. The crawfish are seasoned by sinking and absorbing the highly seasoned water, and believe me, these were spicy and just right for crawfish. No butter needed.
Im not to familiar with cooking crawfish and everything but is there a reason you guys left the potatoes in the bag?
It's "boil in the bag" potatoes. Very common down here with crawfish and seafood boils. They get the flavor, but easier to separate from the other items when they come out of the pot.
to bad im not allowed to send live crawfish here Hawaii says they are very invasive and dont allow imports!

Please don,t believe in Safe Bags made of plastic and above all cooked ones . Oh my God ! I thought I was not seeing it right ! And don‘t you wash your vegetables before cooking ? . Such a wonderful video , but I definitely would not eat this food .
I know you bring it back to a boil after you dump the crawfish in but how long to you let boil before cutting the heat?
In a high performance pot the water will return to a boil in about a minute. Once it does I boil hard for 3 minutes before cutting the burner off. On a regular pot it will take much longer to return to a boil so you are better off going by the color of the crawfish than the time. You will over cook them if your waiting a long time to come back to a boil. It’s a bit trickier

Yes they get very mushy and actually shrink in the shell

Thanks for the vid guys! We've also thrown artichokes and eggs for hard boiled. If the meat sticks, hard to get out, does that mean overcooked? That's what we were thinking when we did our boil last year. I boiled for 2 minutes, then soaked for about 20. Problem was I didn't cool the pot with anything but frozen corn. I'm still a rookie, out here in BFE KS. lol
Yeah, we have thrown all sorts of things into our boils over the years including artichokes. Can't remember doing eggs though! Yeah, if they are hard to peel and become soft and mushy you are over cooking the crawfish by letting them soak in the piping hot water. It's very important to cool the pot once the crawfish have turned red, and are fully cooked. Usually 4 minutes on medium to large crawfish. Small ones only 2 to 3 minutes or like I said, once they turn red. Frozen corn is not going to drop the pot fast enough unless you are putting a whole lot of corn in. Once the temp is down to 150° or under, just let them soak until you think the flavor is where you want it. Thanks for watching!

Hi Russ, great video. Just wondering how long did you boil those crawfish for? Since they were selects how did you know to go for an extra 2 mins? Do you taste them while they are boiling? Thanks
They went around 5 to 6 minutes. The main thing you go by is when all the crawfish turn red, and for a sack that is usually around 4 to 5 minutes, but the size does play a role in that as well. Larger crawfish need a extra minute or two, but the biggest thing is to cool that pot off as fast as you can as to not over cook them, and let them sink and soak until you get the flavor your looking for. This was a well seasoned pot of water, and by cooling them down so fast, they only needed 10 minutes of soak time to get flooded with all the flavor. Was very happy with this cook and no we don't taste them until they have soaked awhile to see if they are where we want them in flavor.

Yes you can tame down the amount cayenne or eliminate it, as well as the hot sauce, jalapeños etc.
