Cambodians, or rather maybe it is just me as a real life fraternal twin Apollo raised in NYC since infancy like Superman, aren’t offended like all the races and ethnic groups of the world that demand inclusion and acceptance like invasive democratic barrier breaking zombies they are. But FYI, the Germans and Nordic countries also have fermented or salty fish they call surströmming. And I never heard of maggoted khmer fish. That is definitely not a Khmer thing. Or maybe I was vacuous of it. The prahok which shares the same etymology as the English and Latin word “preserved” is supposed to taste rich a combination of salty, sweet and tangy all at once like escargot sauce, or cheese. I’ll find a better comparison.

    Maggots are basically House fly larva so the source matters and rotten fish is definitely not a good source. It contains tons of bacteria.

      the bacteria is nullified by the salt so in theory, the bacteria that os living on that paste is mostly good, even probiotics

    Guys, prahok is not a delicacy! It's a widely used ingredient in Khmer savory dishes. It's a salting agent that gives food an umami flavor, without making the dishes taste so one dimensional. Not meant to be eaten raw or straight. Although there are some who do use it raw (but it's never eaten just by itself because it's, after all, an ingredient). But I have to admit that I've never seen a maggot-infested prahok before. That's something I would never eat and is one reason why prahok should always be cooked.

      Ok good cuz I had the feeling that this episode was the equivalent of a child eating raw cookie dough and complaining that it made them sick. It's fish paste, like spam in a can. Yeah you can eat it raw, but you should really cook it and have it with something else.

    The lime juice in the ceviche puts the fish protein through a process called acid denaturation. Similar to cooking with heat.

    Maggots are not the part of the Prahok ingredient. We stamp the fish to paste and we keep it somewhere safe from maggots, the longer the better. We know if the Prahok process really have good taste it would have a very very strong smell abit of juicy come from the fish and the fly really trying to get in it all the time, We have to protect it from the fly. Prahok is not good for eating raw but it's the best ingredient we use to cook as a paste.
    Prahok can smell by the next two houses when open the lid.

    I’m Cambodian and even I have my limits too when it comes to Prahok or anything else like it. Since we’re in the states, we prepare our Prahok in a safer manner where you won’t end up in the ER trying it for the first time. Ours tastes clean and even the odor isn’t as bad or strong. It’s all in how you store the fish, process and prepare it. And no, ours isn’t covered in “maggots”. In fact when I ate this in Cambodia, never did I once find maggots in my Prahok. So this is more of a specific Prahok that caters to a specific group of Khmers who are into that kind of thing. But even my folks deep in rural Cambodia won’t eat Prahok with maggots in it.

    So prahok is more like fish sauce than being a protein. And nobody would think about drinking fish sauce raw, but as a seasoning it can be great. But the part with the maggots is just wild.

      Actually yea. It is more of a condiment than a main sauce of protein. Since it is very salty, it is good in other dishes. Basically almost every Cambodian foods have prahok in them as a condiment.

    Prahok, Is use mostly as a flavor enhancer, not as the soul main ingredient of any food for many Khmer dishes. You just need a bit of it to go along way due to its strong smell and salty. It’s like fish sauce, but different type of umami smell and taste. Prahok dipping sauce after you mixed it with a bunch of herbs and spices, it go so well with grill steak.

      Like ปลาร้า (Pra-ra) in Northeast Thailand? It's not a main ingredient but usually use as a salty sauce kinda thing.
      I don't know much about Prahok grade. But in case of ปลาร้า I think nowadays it got produced much cleaner overall. Maggoted one is kinda old-fashion and unsanitary.

      Honestly at that point don’t take a shower in days, get all sweaty, then take a bath and boil the bath water down to a concentrate. Call that a flavor enhancer too. A little bit goes a long way

    Hiii I’m Cambodian, I love prahok I love eating the different types of it. It’s pungent but savory and mostly spicy, I didn’t know there was an extreme version of it in Cambodia. My family when I visited Cambodia prepares safe versions of it and safely stores it in containers, in a fridge. For me any maggots in my food is definitely not eaten! Ty for showing the different side of Cambodia I haven’t seen.

      I have traveled a lot in my 44 years and have eaten maggot infested meals, you don’t know until it’s too late of course. Ecuador and Senegal… 😂 the time in Africa I was absolutely famished and way out in a remote village and after finding out didn’t eat until getting back to Dakar over a day later 💀.. never got sick.

      ​@@SetuwoKecik Cambodia was in a dark age for over 500 years since 1500s after the fall of Angkor. Approximately 80% of its terrritories was lost to Thailand, Vietnam and Laos. Its land area was ~1,000,000 square meters in 1290, now only 181k square meters. It hit its lowest point in the 1970s, now finally it starts rising again.

    In England year’s ago, they used to eat Stilton cheese that was infested with maggot’s (cheese mite’s) and they used to pour port on the top to kill the maggots and to make it more palatable and you used to get offered a spoon so you could eat the 2 together, thankfully time has moved on

      @@_sshh_absolutely, although I believe it was more luck than judgement, as they had no refrigeration I imagine the thinking was alcohol sterilises so it would kill the mites and preserve the cheese,and enhance the flavour, I can only think the first time the mites were eaten it was more of an accident!

    Casu Martzu is an Italian cheese that contains maggots too. Sardinian cheese but found generally in all of southern Italy.

    I used to have rat snakes as pets. They never bit me, then again I raised them from being worm sized to four/five feet rat snakes. They are so tame and like gold fish. You can breed so many colors and patterns.

    Back in the 90's, when it was hard to find a good asian market, my parents made it at home with catfish caught from the Deleware River in south philadelphia or sunfish from the lakes. It's not that bad. It's like good cheese the stronger the smell the greater the umami. Nowadays we just buy it jarred from the Asian Markets.
