    Years ago when my wife was still alive and the kids were small my wife canned 900 quart jars one year - every thing from tomato sauce - cherries - peaches - beans - etc. - the kids still remember how good the canned cherries with home made yogurt was - makes one feel good when you have a lot of canned food stored and a large firewood pile - God bless

    I'm 60 years old, Cascade foothills of Washington state born and raised. You two live the life that I dreamed of and never took action. I'm in awe of what you've accomplished. Anyone can have bush craft skills, anyone can have gardening skills. The MAGIC that you two posses is long suffering acceptance. Love yourself, love each other, accept what you perceive to be your partners shortcomings and press on. I'm green with envy, sad for a life squandered and grateful for the opportunity to vicariously envision my dreams through you.

      I throw my extra tomatoes in the freezer, too. It works pretty well.

      I have not ever tried to freeze my tomatoes. I thought I had to either use them or give them away (until I learned how to can them). Now, I will freeze them too.

      Unless I’m making fresh sauce for dinner I always freeze them to get a huge batch to can. If you cut a small x in the bottom and take the core out (with a knife or strawberry/tomato corer.) you can freeze with the skins on and just thaw or run under warm water and the skins slip right off! No blanching and peeling. Love to do it that way. You can then dehydrate the skins and make tomato powder (for thickener or reconstitute with some water to make tomato paste).

    In my backyard, we planted purple tomatillos about 10 years ago and they've basically gone wild in the 4 foot by 20 foot side yard that was home to my mulch pile. Most people grow them as annuals; but they are really perennials and around here if you chop them down to about 6 inches from the ground around November, they'll come back around March.

      Actually tomatillos and tomatoes are annual plants. They do not survive the winter and with roots that come back like perennials. But it seems they do because the seeds over-winter and sprout in spring. We call those "self-seeding annuals" and it really depends on what kind of winters you have whether the seeds will germinate - probably not in Alaska

      I live in Vancouver Canada and like you planted about 8 years ago. I tear my plants up every year so I think mine must self seed. I love them so much.They are truly prolific!

    My wife and I always include tomato skins when making tomato sauce since they contain a lot of nutrients. We just grind them up with the immersion blender and no one ever notices them.

    Was that sound in the background of this video pouring rain? Man, that extra covered space you two created has turned out to be SO valuable to have for projects like this when it's raining or you need a dry place to cure onions, etc. Amazing results!

    You guys inspired me to try canning this year. Everything pickled with 1/2 vinegar/water plus spices, but I did okra, cucumbers, peppers, tomatoes, green beans, and Swiss chard. Everything’s been delicious so far. And my water bathing is improving. Last time 6 out of 8 sealed.

    Canning is one of the most rewarding things I have ever done. I love to hear the pop of a can sealing, and just look at all the bounty God has blessed us to have.     Use the thick tomato sauce as a pizza sauce, for bruschetta, or to dip bread into.
    It is also a good substitute for catsup in meatloaf, etc.

    Love that you two show the REALITY of gardening and canning projects ---didn't get to harvesting the apple sized tomatillos on time, "you spilled a little" down the blender and on the prep table, checking the canning book for the millionth time to CYA, we heard sparking and had to stop, experimenting with adding blended tomato peels for thickener. Thanks for always sharing your real life adventures with us all!!

    Wonderful harvest. I've had terrible luck with tomatillos. The same ladybug pests that defoliate my potatoes decimate my tomatillos. This year I've been better at squishing the little critters, so both potatoes and tomatillos are doing better than normal! Fingers crossed for a harvest this year ☺️

    You and Eric need to add on a small room for your pantry stocking. It is important to have adequate storage space. Also where you can have easy access to all the abundance.     I Keep my bees under a carport ( real dry) during winter really helps. (Also I love the wax treated bottom boards)

    awesome! Thanks to you I grew tomatillos myself this year ( I had never heard of them before here in Ireland). I also made Salsa Verde, so good! Basically the same as your recipe, lime and coriander/cilantro makes all the difference. I still have whole tomatoes and tomatillos in the freezer to be processed when the first batch runs out 😊

      I also like how you're strapped in case the grizzly bear comes. that's how they roll in alaska. I enjoy how you do seasonal hunting and harvesting and your food always inspires me to cook

    we had a large garden in our backyard growing up and our grandmother would can everything she could...we still had some canned figs, plums, tomatoes and such for a long time after she passed away..good living. thanks for sharing your life with us!!

    Great video! This is my first year growing tomatillos and making Salsa Verde and it turned out so good. I enjoy your canning videos. I admit it always makes me a bit anxious when you pull those hot jars out of the canner and the air is cool but you know what you are doing. I always look for Bo in your videos. He looks old but I really like him.

    Kids you can make JAM also with that stuff !!! It is so good to have in the winter time after a cold !!! Just use the jam or jelly recipe that you got and it is good on toast oatmeal grilled or baked chicken or roast beef or deer meat great on baked fish also !!!

    It must feel so good to have all that food stock piled for the year! Great work, both of you. Have you two thought about rebuilding the root cellar at the new cabin up north? It looks like the ground there would be much better suited for it.

      I was thinking the same. I wonder if they will bring the current high tunnel, or put up a new one. My guess is that a new one would be best, and another "someday" list might be a greenhouse.

    I grew tomatillos for the first time this year! They made such a wonderful enchilada sauce, I'm amazed. They were purples but they never turned purple.
