I noticed the same thing -- you'll need to execute the following cell before creating the endpoint variable:
import google.cloud.aiplatform
And then reference the Endpoint object as google.cloud.Endpoint, i.e.,
endpoint = google.cloud.aiplatform.Endpoint(endpoint_name='projects//locations/us-central1/endpoints/
