Unfortunately its not a straight forward answer as different grades of gelatin have varied bloom values (setting power) but i can give you a general rule of thumb: one tablespoon of gelatin powder is equal to four sheets of gelatin. It may require a little trial and error with your specific gelatin. You could make the glaze and pour some onto a plate and set it in the fridge, if you are not happy with the results then you can gently heat it again and add more gelatin. Once you are happy, glaze the cake. Let me know how you get on or if you have any other questions.
