I made these cookies yesterday and they were easy to do and really flavoursome. A hit with the family and filled the kitchen with a lovely spicy cardamom aroma. Thanks Mike will definitely make again, hit the spot for my coffee break.
Hi Helen! Please excuse the cheekiness but I just thought I'd let you know that the paperback version of my first recipe Vegan Baking book "Beating Eggs and Butter" has just gone live on Amazon! (E Book will be available on the 21st Nov and the hardback about a week later), Cheers! Mike
* beware these are very stealthy more-ish!!!! They're all like "I'm oaty and lower sugar" but I ended up eating twice as many . . . Glad you enjoyed them Pippa. Got another cookie video coming soon . . .!
Mike I am just about to make these cookies got all the ingredients. When you say 180 good oven is without fan as 180 is 160 fan . Hope you don’t mind me checking don’t want to burn them Thank you this is my first attempt at a recipe though I hope to try others now I have the pea protein and cocoa butter !
Hi Helen - of course I don't mind you checking! Biscuits are more forgiving than cakes so it's a great one to start on - I baked mine at 180 C in my fan oven, so you might need slightly hotter if you aren't using a fan or your oven isn't amazing . . . maybe 190C or 200C. You don't have to bake these straight away (as you do with most cakes) so you could always make them all, and do a little test bake on 2 to start with, keeping the other 4 in the fridge. Make a note of the bake time for the first 2, see how they come out, tweak the time/ temp and bake the next 2, tweak again, and then the last 2 should be getting very close. That's the fastest way to work out bake time for something you haven't gotta bake straight away. You can even keep the other 4 in the fridge for at least a couple of days and bake them next time you have your oven on. Hope that helps! Let me know how you get on with them! They are curiously more-ish for something with no chocolate and quite low sugar. The whole lot vanished between Nat and I in a coupe of hours . . . . cheers, Mike
Will be trying these for sure
WOW, que método más fabuloso. Se ven geniales. Me encanta tu horno y espero en un futuro dedicarme a panadería y repostería vegana.
Good to see you Mike!! I’m subscribing!!
Cheers Louise! Nice to hear from you!

Baked yesterday, gone today!😋 I didn’t have enough cardamom so topped up with cinnamon, the combo worked a treat 👍🏼 roll on the next recipe 🙃

The cookies look so good, and a nice kitchen.
Tengo una mezcla de azúcar, canela y cardamomo. Creo que vendrá genial
