As a 12 year old, nearly 45 years ago, I spent the summer with my Grandpa in Florida. We cruised over to the Bahamas for two weeks and fished almost every day. And we sure ate a lot of Yellow Tail! What a summer...

I slammed the porgies that day! Must of caught at least 7 or 8 good sized porgies one after another an no yellowtail from the port side instead of fighting for yellowtail on the stern with all stern hogs. I will say this, larger yellowtail are definitely firmer than the smaller ones, I think thats where their bad rap comes from ia people filleting up the barely keeps. Alot of people like to cook the smaller ones whole, personally I like to make ceviche with them, dicing up the smaller fillets or cutting them into perfect little strips/ nuggets for tacos.

Did you do same part of the filet? Because I said yellow tail was on the right based on thickness of filet.

I did, the filet was just alot bigger. may not have been 100% fair as the smaller yellowtails are a little more mushy.
