    Hello, I've a question, why do you have to rinse the red bean after it is cooked for the first time? Im actually making this tomorrow, Im excited!

      Hello, thank you for your comment !☺️ We rinse to minimize the foam buildup, excess proteins and in this case bitterness. The technique is called “aku nuki” in Japanese. You can do it 2-3 times for best results.☺️
