Cottage cheese makes the champion of omelettes!
My go to flavourings would be spring onion and wholegrain mustard
Hah! I make this with exactly the same proportions. I normally have bell peppers in it as that's what I tend to have available. Sometimes I'll fold the omelette up and put in on bread with a slice of low fat cheese and make a sandwich out of it.
Oh cool, I also do the sandwich version! Also a version that might sound a bit weird is adding honey and cinnamon, give it a try it might surprise you!
Did I miss it- for the batch, what temp and how long did you put that dish in the oven?

That's a very doable idea however, I have a hard time digesting dairy. I was wondering if you would suggest any alternative(s) to cottage cheese.
