    Cook for 30-35 minutes at 180 degrees Celsius / 350 Fahrenheit (or until it stops jiggling when you take it out of the oven and shake it).

    Cottage cheese makes the champion of omelettes!
    My go to flavourings would be spring onion and wholegrain mustard

    Hah! I make this with exactly the same proportions. I normally have bell peppers in it as that's what I tend to have available. Sometimes I'll fold the omelette up and put in on bread with a slice of low fat cheese and make a sandwich out of it.

      Oh cool, I also do the sandwich version! Also a version that might sound a bit weird is adding honey and cinnamon, give it a try it might surprise you!

    Did I miss it- for the batch, what temp and how long did you put that dish in the oven?

      Hey Thom, I guess I forgot to include that, so good catch. It's 30-35 minutes at 180 degrees Celsius / 350 Fahrenheit (or cook until it stops jiggling when you take it out of the oven and shake it).

    That's a very doable idea however, I have a hard time digesting dairy. I was wondering if you would suggest any alternative(s) to cottage cheese.

    Great recommendation Anthony, but I would find a workaround for the microwave

      Hey Capo, that used to be something people believed a couple years back, but all the current research doesn't show it to be problematic.
