I’m from an agricultural community. My family has always had gardens and we’ve canned our vegetables and fruits every single year for generations. The problem I see with your 2 year plan is that sometimes you have a great year for whatever crop and some years are complete busts. So, if you can 2 years of beans, skip a year, and the following year is a fail, you are out of beans. I say to build up your 2 year supply and then you only have to can enough to replenish what you’ve used every year to bring you back to that level. It covers you on those fail years.

She is a wealth of knowledge on gardening, preserving and cooking. She is in central British Columbia, Canada and I think she has similar weather, length of growing season, etc. 😍🇨🇦
My 9 green bean plants are finally producing but while I had the time to can, I bought almost 23 lbs from a local “pick your own” farm at $1.00/lb. I was able to pressure can 14 qts and 26 pints and will just pickle the ones I’m growing. I still have many jars from last year’s harvest. We have to take the help where we can! My women’s intuition has been pretty reliable and I feel that 2025 is going to be rough so I’m happy to be able to preserve a year’s worth of food.

My August Azure order is placed I am stocking up on all my baking needs for the winter, I am nervous about November and into next year so if I do not need to shop than I will be happy. We have 2 pigs going to butcher Tuesday and we are doing our 50 meat birds in 2 weeks and we pick up 50 more Aug 14 plus we have our 25 roosters and 5 turkeys to put in the freezer in Nov. Our cows wont be ready until the spring but the pork and chicken should carry us and we still have a little beef from our last cow. I have been down with covid the last couple days and seeing a big need to can some ready made soups and stews soon as I feel better,

I’m stocked up and everything is preserved long term. I’ve canned a lot of meat and also a lot of meals-in-jars. Trying to get as much out of freezers as possible.

We live in Southern California we arw growing tomatoes and bell peppers so far we got one tomato and one bell peppers alot of flower just awaiting to grow more vegetables

The white on the sod clumps is mycelium. Very beneficial to soil health.
