    Sage Garlic Butter Sweet Potato Gnocchi Recipe
    Ingredients:
    2 medium sweet potatoes
    2 cups all-purpose flour
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    8 tablespoons butter
    2 cloves garlic, crushed
    Fresh sage leaves
    Bake sweet potatoes at 450 for 1 hour or until completely soft. Let cool.
    remove skins and mash in bowl. Add 2 (or more if neded) cups of flour. Knead together, will still be a bit sticky. Cut into sections and roll into log. cut into small sections, boil for 3 minutes or until floating.
    Add 1 stock of butter and crushed garlic and Sage to pan. Add gnocci and lightly pan fry. Add salt and pepper to taste.
    Tortilla Bake:
    12 corn tortillas
    2 cups chicken broth
    1 stick butter
    1/2 cup flour
    8 Oz shredded cheese
    1 to 2 cups mill (or more broth)
    2 tbs garlic powder
    2 tbs paprika
    2 tbs onion powder
    salt and pepper
    1 cup beans
    Make 12 tortillas or purchase from store.
    Add 1 stick of butter to a pan and melt. add flour and whisk. Add broth and whisk until incorporated and smooth. Add cheese and 1 to 2 cups of milk until desired consistency. Add spices.
    Layer tortillas, chicken, beans and cheese like a lasagna in a cast iron skillet.
    Bake for 20 minutes at 350.
    Sage Fried Rice:
    2 cups of rice (measured uncooked)
    2 cups bone broth for rice
    1 stick of butter
    2 tbs garlic powder
    3 carrots, diced
    1/2 onion, diced
    salt/pepper
    4 eggs, scrambled
    1/2 rotisserie chicken
    6 to 8 leaves of sage
    Cook rice according to package, substitute 2 cups water for bine broth. Let cool, cook day before for best results.
    Melt 1 stick butter in pan, add onions and carrots. Sautee for a few minutes.
    Add rice, turn to medium high and let fry. Stir occasionally. Add spices. Create a well and add eggs. Stir to incorporate. Add chicken and Sage. salt and pepper to taste.

    Do you add salt to the gnocchi dough? Or just after they're cooked? I made them tonight and they were a hit. I'm soooo full!

      I usually add salt to everything! 🤣 I also salt the water too! I'm so glad they turned out!!

    I love that you made an enchilada bake. This is how I always make mine now after a friend did it. So much easier to portion and I feel like it doesn't get soggy like sometimes they can when you roll them. We call it Enchilasagna because of the layers.

      I love that name for it!! It's soooo good, definitely how I'm going to start using more.leftovers too. Anything covered in cheese sauce is 10/10 imo!

    You always have such great meal ideas! I should definitely try the gnocchi! I took some leftover roast beef tonight and made a taco soup with it.

    I haven’t found any whole chicken. that’s cheaper than Costcos cooked rotisserie chicken for $5.33. I take it off the bone & then make broth from it. New subscriber!
