Brownies are Better with This Secret Ingredient: Sourdough Discard

- These sourdough brownies are perfect for using up sourdough discard! They are fudgy, super chocolatey, and have gorgeous crackly tops. Only 10 ingredients and 12 minutes to prep!

Ingredients
10 Tablespoons unsalted butter (141g)
4 oz 60% or semisweet chocolate bar, chopped into small pieces (113g)
½ cup Dutch process cocoa powder (50g)
1 ½ cups granulated sugar (300g)
2 large eggs, room temperature
½ cup sourdough discard (110g)
2 teaspoons vanilla extract
⅔ cup all-purpose flour (83g)
½ teaspoon salt
¾ cup semisweet chocolate chips, optional (130g)

Instruction
00:00 Introduction
00:34 Preheat oven to 350°F (175°C) and arrange a rack to the center of the oven. Line a 9x9” square baking pan with parchment paper. Set aside.
00:38 Combine butter and chopped chocolate in a large microwave-safe mixing bowl and heat in the microwave in 25-second intervals, stirring well in between, until butter and chocolate are melted and mixture is smooth (alternatively you may melt on the stovetop over a double boiler).
01:58 Immediately add cocoa powder and stir well.
02:26 In a separate bowl, combine sugar and eggs. Use a whisk to beat vigorously for about 2-3 minutes (or use an electric mixer on high speed for 1 minute).
03:30 Add sourdough discard and vanilla extract and stir well.
04:22 Drizzle melted chocolate mixture into egg mixture and stir until well-combined.
04:45 Add flour and salt and stir until completely combined and batter is uniform.
05:30 Stir in chocolate chips, if using.
05:40 Spread evenly into prepared baking sheet and bake in center rack of oven for 30 minutes or until a toothpick inserted in the center comes out with moist fudgy crumbs (or clean).
06:36 Allow brownies to cool in pan before cutting and serving.
Notes
Cocoa powder
May substitute natural cocoa powder, but Dutch process works best with this recipe for best flavor.
Storing
Store in an airtight container at room temperature for up to 5 days.

run and hide from the kids---so cute. I just made your blueberry muffin cookies. They were a hit at church work day---but I almost made a big boo boo. I had already made the first mouns of dough on the sheet when I looked at my counter and realized I hadn't added the blueberries-what a dope. So back in the bowl the dough went. I added a dash of almond flavor to mine because we love that in baked goods and whipped cream. Also used lemon juice and zest in the glaze. Thanks for another great recipe. I had quit doing sourdough for a while, but with all your ideas for using it may get started again. Have a great week and Happy Father's day.

I made this i the inner part just seemed to never set enough for me to be comfortable to not bake it anymore ..i ended up baking it for 50min 🤣😂. Let it cool down and it turned out too crusty at sides, but the inner was divine. Will def make it more but stick to the recipe suggestions 😂😂. Love it!!!

Made these today and they are really very, very good - followed your recipe with no modifications. My husband makes sourdough bread, so having the discard was easy. Everyone needs to make them 😍

All I did different was use just cane sugar no white. I also melted chocolate chips, but I want to try using a bar in the future. They turned out amazing. New go to recipe for sure!

I do have a sourdough bread recipe, but I don't use a bread machine. I actually don't own one so I'm not familiar with using them.

how about discard sourdough in the refrigator for 1 week if i want to make this recipe?
Okay so I made these twice. First batch made with toll house cocoa and milk chocolate chips, I made two batches and it didn’t last a two days! I decided to try the Dutch cocoa because everyone swears by it, but I didn’t care for them. Don’t get me wrong they are good just nowhere near as good as the toll house cocoa.
can we use whole wheat flour instead of AP flour?
I wouldn't recommend it here. Whole wheat flour is a lot "thirstier" and other adjustments would be needed.

Do you even need the flour? What would happen if you Just used more sourdough discard?
If you just used sourdough discard you would end up with pretty cakey brownies.

My apologies, I opened a different RUclips saved recipe. Recipe almost identical except the one egg white. Darn now I’ll have to make another batch soon using your recipe the others are in the oven.
I don't belive recipes that use OZ and Cups to measure. Use grams
