    Hello Friends! This is such a special recipe! This cake is rich, fluffy, light, and so full of dark chocolate flavor. Everyone who has tried it says it feels light in their stomach, and has the best flavor of any chocolate cake they have ever had. I know your family will love this recipe as much as mine! This is a cake frequently requested on birthdays!

    Ingredients
    1 C Fed Sourdough Starter
    1 C Flour
    1 C Milk
    1 1/2 C Sugar
    1 tsp Salt
    1 1/2 tsp Baking Soda
    1 C Oil (coconut, avocado, vegetable, whatever you prefer)
    2 tsp Vanilla
    3/4 C Coco Powder
    2 Eggs (mix in 1 at a time with an electric beater)
    Instructions
    1. In a large bowl, mix starter, flour and milk together until they are thoroughly combined. Cover and allow to sit on the counter for at least 8 hours.
    2. In a separate large bowl, mix sugar, salt and soda together until combined. Add sugar and combine. Then add oil and mix until combined. Add vanilla and mix. Add cocoa and mix. Then, using an electric handheld beater, beat in one egg at a time. Make sure to beat well until it's a smooth texture.
    3. Stir the chocolate mixture into your sourdough mixture, and using a hand mixer beat it until it's well combined.
    4. Butter a 9x13 pan thoroughly, and bake for 30-40 minutes at 350 degrees, until a toothpick inserted in the middle comes out clean.
    Chocolate Frosting
    Ingredients
    1/2 C Butter
    4 tbsp Cocoa Powder
    6 tbsp Milk
    1 tsp Vanilla
    Powdered sugar to desired consistency
    Instructions
    1. In a medium sauce pan, add butter and melt on medium heat. Then add cocoa powder and milk, and bring the mixture to a boil.
    2. Turn off the heat and add vanilla and powdered sugar to desired consistency. Mix until the frosting is smooth and well incorporated. Pour over cake and enjoy!

    I read all the comments for this recipe and while i started putting my batter and frosting together skeptically, idk why I was expecting it to be just okay. I licked the batter-what the what!!!!! Idk if i will have enough restraint to save enough batter to bake this thing!! And the frosting?! How can something so simple be so delicious?!     I made this 1time, it was so good, but apparently I hadn’t mixed it thoroughly enough, because there were little lumps in it, like in lumpy gravy. I’m going to give it another try, as a birthday cake for my 89th birthday. Love watching this channel, wish she were still posting videos.

    I made this once and didn't have cocoa powder. I put cocoa nibs in a coffee grinder and used that. While the texture was a little grainy, it was DELICIOUS! I'm making again today for my Grandmother's 94th Birthday Party!!!! Can't wait

    Good morning Jeanie. I make your cake all the time. Whether I do the 8 or all the way to 16 hours it tastes the same and is delicious. My whole family loves it and its healthier then box any day! In fact I never eat box because my stomach hates them. Im so glad you had this recipe. I still would love to know what the calories and sugar is. But either way it is my weekend cheat.

    Here are some recommendations
    1) shift your flour before mixing with everything.
    2) I try yours as is and love it. This time, I like to put peanut butter icing this time to get a different flavor.
    I highly recommend this recipe.

    I am so mad at you!!!! I made this cake yesterday and I have eaten two pieces in two days. Might not sound bad, but I try not to eat sugar and I have had it two days in a row and I am dreaming of my third piece. My husband needs to eat this faster so it is out of my house. This is a wonderful, moist cake and a delightful way to use sourdough. Thank you for the recipes but not the added weight I am gaining😂

      I seriously have the same problem!! This cake is WAY too good:/ I always think I can just freeze half of it so I won't eat all of it, and then two days later I'm digging it out of the freezer.

    Please give weights instead of words like "cube" for butter for example. Cube means nothing to people living outside of the US. In any case that looked like a stick..... However I cannot wait to try this recipe!! Your cinnamon buns were fantastic so I am looking forward to this

    I'm making this tonight. Hoping my husband likes it. He absolutely does not like the sour in sourdough. I made cinnamon rolls (not your recipe-yet) :) and I did not think they had a strong sour flavor at all but he took one bite and that was it. He could not eat it. I did make a sweet stiff starter so hoping that helps and I'm not going to ferment it as long. Longer fermentation makes the more sour taste doesn't it? Chocolate cake is his favorite dessert and I'm hoping this one will be a hit.

      I do this recipe with a discard and it was delicious! Actually your discard gets fed when you add the flour to it. And 1) I do not let sit over night; I bake it as soon as I am done mixing; 2) I reduced the sugar to one cup. The result is very nice, moist and spongy.

    Could you make this as a yellow cake? How would you adjust for the reduced dry ingredient if you leave out the coco? I made it just the way it's written and it's the best cake Ive ever made! My son prefers yellow cake though so I want to give that a try.

    i have made this cake so many times. It's my all time favorite. Have you ever tried making this without the cocoa powder? I want to make a vanilla cake and wondered if just leaving out the cocoa powder would work or if i would need to add 3/4 Cup of some type of dry ingredient.

      I honestly love chocolate cake so much I've never tried a vanilla version! That makes me wonder... I honestly don't know, I'd have to do some experimenting. If you end up trying to make a vanilla cake, you have to let me know what you do!

    I just made this cake (haven’t tasted it yet) and it’s only about an inch high. Can’t figure out why it’s not as high as yours. I didn’t have a hand mixer so I used my KitchenAid with the whisk on it.

      You sure can! i'm not sure how much you will have to use, you might have to play around with the ratio a little! I would love to hear how it turns out!

      I first tried with sugar (but 1 cup instead of 1 and 1/2 cup). I will try with maple syrup next time.
      It was the most delicious and easy for stomach!! it was even better 2-3 days later.

      Wow thank you for sharing!! That is so wonderful to hear:) I haven't made a video on increasing your starter, but that is a great idea! To increase the starter, feed your start 1c flour and 1/2c water every day without discarding until you have the desired amount.

    What do you think will happen if I add the sugar into the sourdough batch for the bacteria to eat up ? Will that work?

    That cake looks so delicious, I have a couple of questions, do you think I could substitute the cocoa powder for carob powder? Also, sub the white sugar for coconut sugar? I would like to make this cake for my son’s second bday ! ☺️

    Am I supposed to use the sweet stiff starter? I made an SST earlier today for this recipe.

      If you want to. the sweet stiff starter will make your final desert less sour and more sweet!

    Hello buddy I've been baking sourdough for just a few months but I have not yet baked a perfectly risen loaf, worst lately my sourdough bread looks like pancake, very tough and and barely rising, I dont know what's wrong. I observed after I transfer the loaf from the banneton it just sagged on, the more it goes after I scored it, seems like the dough has not enough strenght to bulk or hold to it's form. I need you expert advise. Appreciate it much.

      I haven't tried it before, but I think it would work. This cake is very soft and the starter might give it a little more structure which I think would be nice! If you try it let me know how it turns out!

    I made this cake couple of times and every time I take it out of the oven it goes down… do you know why? What am I doing wrong?

    Can soda be skipped? Can we substitute oil for nut butter?

      It will change the texture of the cake and make it more dense. If you want to skip the soda, make sure the starter is really active to give your cake the best chance to puff up. You could try substituting the oil for nut butter, it would likely just make the cake more dense again. I love coconut, avocado and olive oils personally. Give it a try and let me know how it turns out!
