She was more than my mother, she was my best friend. God alone knows how much i miss her. Hold on to your mother tight and treasure every second she is with you.
With the Kitchen Aid I have found that if you kneed your dough on speed 3 for 10 minutes after you have added all the flour, the dough will not be sticky. Set your timer and let the mixer do its thing. I use a spoon to scrape out all the dough from the bowl. But, if you kneed it 10 minutes the dough will have come together very nicely and will come out of that bowl perfectly. I have been making buns and bread since I was 10 years old.
I made another recipe that was (almost) identical. I did substitute 1/2 cup milk for part of the water. Milk makes dough softer. They turned out lovely. You don't need to kneed the dough. Just make sure that the flour was well incorporated. I did have to add to bit more flour. Then I made the rolls immediately. And let them set for 15 minutes. Then put them in the oven. And they raised perfectly. Couldn't ask for anything better. It is a simple, easy recipe. Great for last minute rolls.

Great recipe, sister! I tucked some brown sugar/butter/chocolate chips into some, and rolled in cinnamon sugar. I placed them next to each other to proof and baked as you instructed (with 5 mins added to bake time). We ate them as pull-apart sweet buns; the kids loved them. I've tried mannny recipes over the years trying to replicate the yeast rolls that remind me so much of my grandmother but have honestly not had much luck until now. These are rolls delicious and the baked rolls freeze great. I made a double batch , baked to 195 degrees with my digital probe, cooled off and froze 2 of them in bags. The 195 keeps them from being to dry in my opinion. Warmed up gently from frozen . Awesome !
I made your recipe, but I used 4 cups of flour. I did use half a cup of sugar and did not change any more of the recipe. They turned out beautiful, I mean perfect. I put them in my freezer because with just me and my son here, that made plenty. I will take a few out in the morning and let them thaw for lunch. The smell of that dough was heavenly. I cannot wait to try them tomorrow. I also did not have to use flour to pinch mine off, and they were beautiful. Thank you so much for taking the time to make that video. You brought back precious moments and you gave me a craving for yeast rolls. 😊 Guess it's yummy dinner rolls tonight. I think yours came out perfect but if the size of your baking tray bothers you, you can always use a strip of parchment paper. fold it in 2 or three layers and put it at the end of the rows of rolls. To keep it in place just put up 2 or three ovenproof cups or a smaller container as long as it's ovenproof. You can help your rolls puff up even more by filling some hot water in the cups. If you go to your local goodwill store, chances are you’ll run across a bread machine for under $20. Buy it. I never looked back after buying mine because it makes perfect dough. Theres a dough setting. You can set it and forget it until it’s done mixing, bring out the finished dough and make rolls, loafs etc. Best thing for holidays.

I do a lot of cooking and baking at times. Sometimes I cook and bake things for my children and also to send along for our church's first Sunday of the month meal. It is a pitch in meal. This last Sunday I fixed candied sweet potatoes, 2 big containers of deviled eggs, (my daughter's hens are laying well) and a container of Waldorf salad. I did not have much left. I love the way you disscuss this recipe very well done i can tell you are a kind and gentle soul i take it you have well water. I have found a really good way to filter your water its what i do myself .i built a filter .which will utilize your water until it clears.
I do not have well water. We did when I was a child. Our water is just bad sometimes. I keep a water filter just so I can make sure what I drink is clean. Thank you for your lovely comment. Oh my gosh they look delicious!! I've never been successful at making yeast rolls. My Mom made killer homemade yeast rolls and cinnamon rolls. Well I tried to make them. The only difference is that I don't have a stand mixer with a dough hook. They did not turn out well at all. They looked pretty coming out of the oven. But they were definitely not light and fluffy. I had to knead by hand and guess at how long to do that. Guess I need to quit trying to make yeast rolls OR break down and buy the expensive tools to make them some other way. I was so hoping they would be like yours. 😥
@judyhenson6329 hmmm... I wonder what happened. Maybe it was too much kneading? The original recipe called for bread flour, but I never buy it. It is ground finer than regular A.P. flour, has less protein, and more starch in it. Sorry it didn't work out. 😔
I doubt it was too much kneading. My arthritis is pretty bad. I used AP flour even though I had bread flour. I followed your recipe and video. I think the difference is in the right amount of kneading by hand vs. machine. It's fine. Don't feel bad. It was something I hoped would work out, but it didn't. No problem 🙂@@PeaceBstill

I sifted it after I measured it. I also only sifted once, and it worked. When you measure your flour, don't shake your cups to pack the flour down into it. I scoop it and level it by pushing the excess off with a knife or my hand. There is a man who just recently commented on this post he said I didn't have to kneed the dough so much, and he added the 1 cup of water he used 1/2 water with 1/2 milk. There are lots of great tips in the comments. I haven't tried it yet, but I plan on it soon. The original recipe I found used bread flour, but I never buy it. Goodness I wrote you a book! Your rolls look great. I've made yeast rolls one time using recipe from Ranea with Little Village Homestead. They were beautiful looking but the taste just wasn't there. And they were dry. Going to try another recipe.
This recipe wasn't dry and very buttery. I've tried so many recipes over 30 years. I gave up. Lol! Then I saw this one and thought, "What the heck, I'll give it a try. I'm so glad I did! Don't skimp on the butter. I made it a few days ago and brushed garlic butter and sprinkled Parmesan cheese on top after it cooked. Awesome! It was great with spaghetti!
@sararich2026 i have used this recipe and made a loaf of bread instead of rolls. Instead of rolling into little balls, I rolled it out flat, then rolled the dough up into a log shape. I put it in a loaf pan, let it rise, and baked it. It takes a little longer to bake, but it's still delicious.
I tried this. i used bread flour and they could have used the rolls to anchor a ship. Think my yeast was dead. I had it for a while...lol Will try again...could only try a would say pinch but it was more like a tear ....Keep breading, Y'all

I use a tea towel or paper towel to lay in the bottom of a container and store the rolls in it. I also freeze the dough rolls in ziplock bags after I flash freeze it for future dinners.

Just a little tip Kitchen Aid recommends that we do not knead dough high than level 2
I use homemade butter instead of oil. Keeps it sticky but moist feeling. KitchenAid done spoiled me 🤣. My mom loved hers.

Theres a dough setting. You can set it and forget it until it’s done mixing, bring out the finished dough and make rolls, loafs etc. Best thing for holidays.

I do a lot of cooking and baking at times. Sometimes I cook and bake things for my children and also to send along for our church's first Sunday of the month meal. It is a pitch in meal. This last Sunday I fixed candied sweet potatoes, 2 big containers of deviled eggs, (my daughter's hens are laying well) and a container of Waldorf salad. I did not have much left. The few leftovers my daughter took home for her family. I am already thinking on next month's meal. I so enjoy watching how other folks fix their foods.

I have a very small family but am thankful I have it. I always love hearing about people with large families to feed. What I fix usually goes to my parents' or my daughter's home too. When my family gets together, we are a total of 9. Not counting furbabies! Lol

I love the way you disscuss this recipe very well done i can tell you are a kind and gentle soul i take it you have well water. I have found a really good way to filter your water its what i do myself .i built a filter .which will utilize your water until it clears.
I do not have well water. We did when I was a child. Our water is just bad sometimes. I keep a water filter just so I can make sure what I drink is clean. Thank you for your lovely comment. Oh my gosh they look delicious!! I've never been successful at making yeast rolls. My Mom made killer homemade yeast rolls and cinnamon rolls. You made this look so easy that I am going to have to try to make them. I don't have a dough mixer or bread machine so I'll have to knead by hand and hope for the best I guess. Merry Christmas!

Well I tried to make them. The only difference is that I don't have a stand mixer with a dough hook. They did not turn out well at all. They looked pretty coming out of the oven. But they were definitely not light and fluffy. I had to knead by hand and guess at how long to do that. Guess I need to quit trying to make yeast rolls OR break down and buy the expensive tools to make them some other way. I was so hoping they would be like yours. 😥
@judyhenson6329 hmmm... I wonder what happened. Maybe it was too much kneading? The original recipe called for bread flour, but I never buy it. It is ground finer than regular A.P. flour, has less protein, and more starch in it. Sorry it didn't work out. 😔
I doubt it was too much kneading. My arthritis is pretty bad. I used AP flour even though I had bread flour. I followed your recipe and video. I think the difference is in the right amount of kneading by hand vs. machine. It's fine. Don't feel bad. It was something I hoped would work out, but it didn't. No problem 🙂@@PeaceBstill

QUESTION: You said you double-sifted your 3 1/2 Cups flour. Did you measure the 3 1/2 Cups BEFORE or AFTER you sifted? Thank you.
I sifted it after I measured it. I also only sifted once, and it worked. When you measure your flour, don't shake your cups to pack the flour down into it. I scoop it and level it by pushing the excess off with a knife or my hand. There is a man who just recently commented on this post he said I didn't have to kneed the dough so much, and he added the 1 cup of water he used 1/2 water with 1/2 milk. There are lots of great tips in the comments. I haven't tried it yet, but I plan on it soon. The original recipe I found used bread flour, but I never buy it.

Your rolls look great. I've made yeast rolls one time using recipe from Ranea with Little Village Homestead. They were beautiful looking but the taste just wasn't there. And they were dry. Going to try another recipe.
This recipe wasn't dry and very buttery. I've tried so many recipes over 30 years. I gave up. Lol! Then I saw this one and thought, "What the heck, I'll give it a try. I'm so glad I did! Don't skimp on the butter. I made it a few days ago and brushed garlic butter and sprinkled Parmesan cheese on top after it cooked. Awesome! It was great with spaghetti!
I've never made any bread products before.can you use this specific recipe for making any bread product? Do you have to increase the cups of flour?
@sararich2026 i have used this recipe and made a loaf of bread instead of rolls. Instead of rolling into little balls, I rolled it out flat, then rolled the dough up into a log shape. I put it in a loaf pan, let it rise, and baked it. It takes a little longer to bake, but it's still delicious.
I tried this. i used bread flour and they could have used the rolls to anchor a ship.
Think my yeast was dead. I had it for a while...lol

I use a tea towel or paper towel to lay in the bottom of a container and store the rolls in it. I also freeze the dough rolls in ziplock bags after I flash freeze it for future dinners.
