I found the channel during the early morning that I wanted to make boiled dumplings just as Mike grandma does them and I didn't want to wake her up and man the recipe was exaaaact! I love it. That looks amazing! I think though for myself, I would chop up some shrimp and add it to the potato mixture just to make it easier to eat. Then, I would top them off with a few whole shrimp for the presentation. I wish I had one right in front of me right now!

Those are Idaho potatoes good for baking&stuffing those loaded potatoes look good my favorite you could add some cooked maple bacon chopped up and put on top.

Looks great... the oil and the salt helps crisp up the skin crusts. A good loaded potato should be crispy on the outside and soft and creamy on the inside. I've done the basic cheese onion and bacon version before, but I have to try this shrimp version. Thanks for sharing. PS: I like your method of slitting the potato open rather than cutting them into two separate pieces.
