The melting speed of Digital Meltinchoc is variable and it depends on many factors: for example on the quantity of chocolate in the tank and its composition, whether it is in tablets or a solidified single block, as well as the starting temperature at the beginning of the cycle and the room temperature. The melter is essential to prevent the chocolate from spoiling, too high temperature could burn the chocolate. normally to temper dark chocolate you have to go through 3 temperature phases, 45/50, 27.5 and 31/32, why the machine will only offer 2 temperature phases ?
People, don't follow theses steps! This take 2/3 hours to happen. Melt your chocolate elsewhere like your microwave until it reaches 45ºC, remove the tank from the machine before it. Add your melted chocolate in the tank and add 1/3 or 30%/35% of crystallized chocolate, stir and let it reaches your working temperature. This whole process should take no longer than 10 minutes clean and faster.
The speed of melting depends on many factors. However, the main characteristic of Digital Meltinchoc is not the speed of melting, but the quality and precision of the result that can be achieved. As well as being a melter, the Digital Meltinchoc is above all a maintainer, capable of "preserving" the chocolate at a predetermined temperature so that it is instantly available for the most varied uses. With the seeding method you add the b5-crystals through the unmelted chocolates and then just have to lower to 31 degrees.
