This is a really nice gadget to show off in any hipster coffee bar! I love it! It would be best for people that watch you making their drink sitting on a high chair at the table bar!

Excellent review, as usual. I found etzinger grinders when looking for ways to make my Sette quieter. Given the price difference my Sette looks to be an even better value. With an 1zpresso for filter backup (thank you, Lance) I will still be under budget.
Me, at the grinder overview: ...this looks an awful lot like a hand-operated Sette. Lance pulls out the Sette "Well I'll be!" Very interesting proposition I must say.
I remember watching Lance's videos for the first time and finding his presenting a little bit chaotic for me at times (very similar to my partner who has adhd😅), but the information was so useful that I'd just kinda put up with it and just keep watching anyway. Nowadays I dont really even notice it, I feel like I've got used to how he is as a person and I just focus on what he is saying, rather than how he is specifically saying it, and some of the things I've picked up from his channel are things I still do every day at work now. 😄 Btw that James Hoffman grind face was so funny 😅😅😅

I think it would be great if you make a video about seasoning in general. As an example does comandante C40 needs a seasoning? Typically which burrs need seasoning and how much. Any thoughts on the orphan espresso grinders? Looks like the lido series uses these burrs too, i was debating getting their new OE lido OG thought it looked solid.

I did, but the issue is the cone isn't quite wide enough for the collar in the sette. Perhaps one could switch the one from the etz into the sette, but I didn't try that
Yeah. I even tried triple shimming to get the burrs closer, but it seems the ring is just a bit wider in the sette. Even with 3 shims, going as tight as I could, still yeilded coarse, uneven grounds

Hi Lance, finally figured it out from Instagram, WOW man what a trip!! Thanks for being patient with this old man. Anyways, interesting grinder it looks very Setti, but honestly, not really interested in a hand grinder. I get really bad cramping in hands so have to stick with electric except. I think this company makes an electric? To change subject, I heard you mention seasoning a Vario-886 in another video. How many lbs does it take to season the Vario-886? I have to admit that since getting the Vario-886 I think I prefer conical to flat maybe it's because I prefer medium-dark to dark coffees.
So sorry for the delayed response. Hopped on a flight soon after you posted here to SF. On the way back. Sadly, the Vario needs like 30lb of seasoning before it is on prime condition! But you could absolutely just prefer conical. They are MUCH easier to dial in and they emphasize those notes you love
Would you consider reviewing the smaller etz-I? I just found out about this and it looks as a strong Comandante competitor, but with tons of smart thought through features. I've been looking for a long time for a compact all purpose hand grinder and this looks so far the best. Perhaps just few thoughts about it? Thanks!
For sure! If I can get my hands on one. I love that they have the ring rotating as opposed to the burr itself. Really unique and I think perhaps offers a better and more consistent distribution.

that horizontal handle is such a design flaw 99% of home espresso bar or little corner will not be adapted to it. Like you said everything is alway near a wall lol
What impresses me about your way of saying SETTE is how corectly you're saying it wrong. Sette is seven in italian. You're saying sept, which is seven in french 😅
It seems to grind very fast for only a 32mm cone. I was wondering if the crank rotation is up geared to turn the burrs is 2:1. Essentially every rotation of the crank, turns the outer burrs by 2 revolutions? The Lido E also has Etzinger burrs and it takes a minute to grind 15g. I just measured it today and its cone burr is indeed 32mm at the largest diameter, the 48mm figure may be referring to the outer burr. Why is this Etzman so fast with such a small cone burr?
Really depends on the bean you are using and burr set. Some of them have a pentagonal shape which is a really fast entry rate. That, plus having a solid 3 step crushing phase that is efficiently laid out allows for quick grinding. Though, I suspect it could be a bit quicker.
Well sure. I've taken it apart to look at it, but I'm referring to a system to make grinding easier. It is pretty straightforward in the etz and my understanding, with the gear switch option on the hg2, that there is a lot more going on. That, plus James grinding on the hg2 looked extremely easy lol
30 seconds into the video and I have to comment, it looks like somebody found the Dinosaur cousin to the Baratza Sette grinders....a pre Columbian Coffee Manual Sette Grinder.
Not a fan of huge hand grinders like this HG-1 and Apex... however, the HG-2 with the '2nd gear' thing is kinda interesting. More hand grinders should have that option for light roasts lovers. Little bean bastards can get pretty dense.

It's not good advice to season the cone burr separately in your Sette. That leaves you with a seasoned cone and an unseasoned ring burr. Better to have them wear in together.
I said this in the video if you watched it. And you can season the single ring burr with one set. The point is the season the cones since you get there cones and one ring. Cheers

I conceptually like manual grinders, but I don't know if I would enjoy grinding a large batch on a better grinder than the budget one I have
Yeah that makes sense. It's a pain to grind a lot on it, especially lighter roasted coffees!

I'd imagine you could with the right drill bit. Would need to be heavy duty, though.

This is true. Mainly because there is not a complex system, which is likely why grinding is so difficult.
