Eat protein first and get it into your bloodstream, wait 1-2 mins, and that much sweet potato will not be able to make your blood sugar rise. Protein stabilizes your blood sugar. Don’t undereat nor overeat your protein because that changes blood sugar stabilization.

This is not correct according to Dr Mandell. In another video he said you can reheat cold rice, pasta or potatoes and the glycemic value will remain the same as it was when it was cold.

So you said boiling them helps with the glycemic index, but how about baking them in the oven? I always throw them in the oven whole and then refrigerate them for the week. Does baking them do the same thing as boiling?

Boil them is best. Lower glycemic index when boiled. Also refrigerate is good to lower glycemic index.
