Doesn’t the ice melt as the hot brew is dripping over it making the coffee extremely watered down and diluted? Just pour it hot then stick it in fridge then add ice?
I use iced brew at a ratio of 1:16 for 30g of coffee beans. There is 240g of ice in the carafe and I brew the coffee with 240g of hot water. Since I poured hot water in a 1:8 ratio, I grind it finer than it should be. For example, grinding 550 µm instead of 700 µm. This ensures that the brewing time does not end quickly and allows you to get a better taste by diluting the more concentrated coffee when it meets the ice.

It is worth noting that cooling coffee right after its brewed with something like ice or chilled metal will produce a very different flavour than if it is done slowly in the fridge
