I followed the recipe exactly and it turned out great. For those wondering, I used a digital scale to measure out my ingredients in grams. Not difficult at all. The 60 g egg yolks was exactly 4 egg yolks and the 105 g egg whites was slightly less than what I received from the 4 eggs. You'll have to measure the egg whites with the digital scale. This cake was delicious and not too sweet. It reminded me of a matcha cake I had at a tea house in Kyoto.
amazingly beautiful and delicious perfection i love no music no taking because i am paying such close attention to your calm hands and reading the screen helps me remember steps thank you i am excited to make this for my family
I tried this today! It's very nice! I used four drops of lemon juice and it worked just right. The only problem is I am using a different mold, and I didn't use cardboards. The cake thus turned out to be little brown than green. I read the reviews and I decided to try water bath next time. Also cutting the cake is really difficult! It's soft and will deform when you cut it. However it tastes good even mine doesn't look good. Love this video. I love corn oil over butter, since the later has to melt. And I use corn oil to cook so it is also more convenient.
I tried this but some changes based on another recipe .I used 2 tbsp of matcha of different kind since one is lighter than the other and used less than 1/2 cup of sugar . I baked it in on another pan with water.I used whole milk instead of water and I have to adjust it to make the mixture right.I used a different oil as well. Turned out really yummy with tea. The 2 liner on the bottom really works but I lined my sides too
I used water bath in baking this cake today! And a loaf cake mold! It is just perfect! It is soft and has a little moisture. I love this cake! I am wondering how to make the cream layer tastes better, so I also add sweet red bean in cream. This is a nice recipe. By the way, don't use organic matcha powder. It turned out like burnt instead of green.
I’d like to make this for New Years. Only thing is I’m wondering if we need to use the foil inserts as I don’t have them. Can I still make this cake without using them?
Hi KT, regarding the cardboard wrapped in tinfoil, is this cake doable even without it? I just don't have any slightly larger cake pan to hold the cardboard sidings.
Kitchen Tigress, i had tried to make this cake, only when it done is not the same as you made, cause i can not find the green tea powder in my country so i use other green tea so the colour is not strong as like your green tea powder. And also i am not use would do, may i ask you what is would do? i saw in your video you used 5 g would do before you add the warm water, could you tell me what is would do? Thank you for sharing.
Hi, I used your recipe and was pleased....except my cake collapsed in the center, after cooling...a big dip in the center. What do you think happened? Thanks!
Hi KT, I really enjoy watching your videos especially the cakes. I have a question about the meringue making part. At the beginning you used the electric whisk the egg whites, then towards the end should the whisk be on low speed or to stir it manually?
Hey Kitchen Tigress, I want to know if you can use other oil other than corn oil because I mostly like to use vegetable oil instead, is it ok to substitute corn for vegetable?
I did mine with the water on the second pan. I used a 2 inch deep square pan 8 x 8. I have a smaller counter top oven , baked at 375 F and about 25 min
This looks so good, I'm a huge matcha fan and I'm going to make this as a green Christmas cake. The only thing is, the matcha powder I have at home is so much lighter in colour. Does anyone know why?
I wonder if I can use the same amount of cocoa powder, instead of matcha powder, to make a chocolate sponge cake? Do I have to change the rest of the recipe? Thank you!
nope.there is only 5g of matcha powder in this recipe can wont have a deep chocolate flavor is u use cocoa powder instead.i guess increasing The amount of cocoa powder would be better:)
Penelope Tran Try looking for 'Pastry flour'. If you really can't find any, read this site: bakingbites.com/2007/05/subbing-all-purpose-flour-for-cake-flour/ :D :D it says u can use all purpose flour but u use less than what the recipe asks for
I tried this AWESOME recipe and got an AWESOME cake! I scaled it according to KT's cake faqs and got a beautiful result! I looked exactly like the video! But I had a scare when I tried to invert the cake to cool. The cake just dropped right out! I do not know why, but it still tasted great!
cake flour has less (or i think more not sure) gluten it it which makes it more of a spongy texture. i think you could use all purpose it would just be a slight difference in texture :3

hi, can I substitute corn oil for olive oil or butter?
+Nicole Wong Peanut oil would work better, but olive oil should work fine. I wouldn't use butter, though.
I definitely would NOT use olive oil for anything that is sweet, like a cake.
I tried this AWESOME recipe and got an AWESOME cake! I scaled it according to KT's cake faqs and got a beautiful result! I looked exactly like the video! But I had a scare when I tried to invert the cake to cool. The cake just dropped right out! I do not know why, but it still tasted great!
elegantly done with exquisite precision!
would the cake have any effect if i used all purpose flour?
cake flour has less (or i think more not sure) gluten it it which makes it more of a spongy texture. i think you could use all purpose it would just be a slight difference in texture :3
Cake flour =Low protein(gluten). You might want to look for pastry flour if available

You're not alone dude 😂😂
