I baked this cake after a successful attempt at baking a flourless chocolate cake. The chocolate cake turned out great but I couldn’t say the same for this one. I followed the exact recipe and it looked exactly like the cake in the video. But it tasted awful! Nothing wrong with the recipe but IMO matcha doesn’t sit well in the cake setting. But thank you for the video, I love your recipes!
Y'all I actually made this cake so here are some takeaways you'll want to see before you actually make this Ive been consulting the comments here that made this cake and went into making this cake extremely warily and frankly not looking forward to it as i bought the ingredients before actually checking out people's reviews of it but let me tell you guys how to avoid the disastrous flaws made in this recipe so your cake doesn't end up tasting like shit. STEP 1 - AVOIDING THE OBVIOUS FLAWS IN THIS RECIPE: Thy Than firstly forgets to mention that matcha is a very delicate ingredient and its flavor can drastically change (for the worst!!) if either of these things happen to it - A) you use water that is too hot e.g. above 70 to 80 degrees C which will burn the tea powder and give you a nasty bitter tasting product. B) you use metal tools e.g. a metal whisk/ metal bowl etc. when preparing the matcha which will result in the tea absorbing the gross metallic flavor of the tool you've used. NOTE: this applies when the tea is hydrated/ put in water which means that yes, you can use a metal teaspoon/ spoon to ration out the powder itself but once the powder mingles with the water it is more delicate and absorbs metallic flavor easily. STEP 2 - REALIZING THAT THE MIRROR GLAZE IS KINDA BEYOND REPAIR (unless you're a skilled baker that is experienced with this glaze): Thy Than's recipe requires you to make a thick matcha paste with a little hot water, then adding sugar and cream and boiling the mixture - refer to my step 1 where I mention that matcha will burn and taste like ass if the temperature is too high. I dont have a cooking thermometer because I don't believe in consumerism and I bake for fun probably just thrice a year which means I wasn't able to heat this mixture up by ensuring it doesn't burn as I had no idea what temperature it was at. I assume if you bring liquid to a boil it charts pretty close to 100 degrees celcius so I decided I had no faith in Thy Than's glaze recipe due to the risks of burning my matcha. My variation (it didnt turn out so good texturally especially because I drastically scaled it down because I felt the glaze was excessive and kinda wasteful - FYI it tasted pretty OK) was as follows if you're interested: bring the said amount of water, glucose and sugar to a simmer (low-med heat); turn heat off but keep on heated stove for residual heat; add white choc to the pot; add cream & bloomed gelatin leaves; stir well. I was concerned it was too runny so i heated it again (big mistake - it made my glaze super thick once it cooled down, dont do this lol). If your glaze seems too runny give it the benefit of doubt, let it cool down to roughly 30 degrees C and it'll thicken as it cools down. I then begrudgingly seived some matcha powder to the mix to avoid clumps to get that green color but obviously it looked grainy and dumb, and the color was funny - it ended up looking like kiwi juice with all the small clusters of matcha which was fine. Another tip when applying the glaze is to work fast esp if youre in a cold country. The glaze thickens up super quick and can accumulate in large ugly lumps on parts of the cake, so pour quickly, evenly and all around the surface and you should be good. I also used my palette knife to smooth the glaze over but it caused the glaze to lift, leaving ugly bald patches on the cake so if your glaze looks stiff like it has already set - do NOT touch it, however ugly it looks. Because it'll only go down hill from there. and finally, onto STEP 3 - the CAKE TASTE REVIEW: I made this cake and it tastes quite nice, it has a nice matcha aftertaste as in, it tastes very much like tea but not in a grassy or gross way so it's an enjoyable eat actually! I'm a picky eater btw so I promise y'all it really tasted pretty good as long as you treat your matcha right. Thanks Thy Than for the recipe even though it's not entirely correct, love your editing style and display of the cake and now I'm enjoyin some bougie matcha cake thanks to you

Matcha tastes like green tea. Earthy. Grassy. More bitter than sweet. It's an acquired taste.
