You can rehydrate it with boiling water, then use it as you would any cabbage. We like using it to make a fried cabbage, bacon, and onion side dish, and in this unstuffed cabbage casserole: foodprepguide.com/unstuffed-cabbage-roll-casserole/
I’m not familiar with perilla. If it’s an edible food or herb, it can be dehydrated. Having no experience with perilla, however, I can’t say how the texture would be once dehydrated.
I had one entire cabbage eaten too much by whatever so I threw it in my 'groundhog' pile (it digs into our compost lol). We saw that the cabbage had been eaten but not the outer leaves. Nothing likes those outer leaves. 🙃

We use it for a fried cabbage side dish, stir frys, and unstuffed cabbage casserole. I haven’t made sauerkraut yet, but I’d like to try it soon! 🙂
