How to use tomatoes, sunshine and salt to make Sicilian 'astrattu' | Pasta Grannies

- What do you do when you have loads of tomatoes? Make tomato paste! In Italian it's called estratto di pomodoro; in the Palermo area where Pina lives folk call it 'astrattu'. The ingredients you need are non irrigated tomatoes, strong sunshine and salt. Pina makes the process look elegant and easy.
If you want to try making this yourself, allow 100g of non iodised salt for every 10kg of tomatoes, which should result (Pina says) in a kilo of 'concentrato' - another word for this paste.
For the meat stew, use around 500g of pork ribs, and 500g of pork shoulder steaks, one onion, 2 heaped tablespoons of good quality tomato paste (make sure it is sweet and savoury, not sharp), black pepper, 2 litres of water.
'Siccagno' refers to the way these tomatoes are not irrigated. The actual variety of tomatoes can have also names like Ruccaloru, Pizzutello e Valledolmo.

Fantastic. It looks so good. In my hometown in Turkey, my mom and other neighbors make a very similar tomato paste. However, they do not let it lie on wooden boards, instead, they use trays. Then they let it dry on the roof under the scorching sun. The result is very salty paste can be used in different meals for coloring and taste

That's similar to how I've seen Italians do it in America. Well, like the older generation. I don't think a lot of younger people know how to make it here. I heart cooking, and I have never even attempted it LOL! My ex was Turkish too and it's surprising how many foods we share in common between Italy and Turkey ^~^

We take so much for granted I’m sure I’ll never open another can of tomato paste and not think of her on that rooftop. I’m totally amazed at how neat and tidy she is. People worrying about flies !! Oh really? People in this region of Italy and other areas of the Mediterranean are often well over 100 years old. I suppose that with or without flies, this food should be good for your health.
Also the salt, the acidity of the tomato and it's dry and hot. We've been drying food in the sun for millenia.

In my countey Turkey, we have something similar to this called "salça". I thought it was salça when i first saw it. It is so interesting how we share similar things without knowing. Thanks for the video.
Italians Arabs Greeks and Spanish people have a very intertwined history, for example, the traditional dish of my city Venice the saor, meaning the flavour, practically an Arab dish (Venice was very influenced by Arabic and Turkish culture both in dress and architectural style, language and culture) it's made with sardines cooked with vinegar onion, pine nuts and sultanas dried grapes same can be said with sicilian cuisine.

Having canned tomatoes in the heat of August, I'd say the roof top was preferable to the kitchen/ stove. What a great treat, those jars of sauce. You'll have a bite of summer in January.

@@mcgee227 it's very dry and hot weather in Sicily. On the rooftop it could be somewhat windy too. I think that's why there are no bugs. Where i live it's too humid to sundry anything.

Those tomatoes look INCREDIBLE. Tomatoes like that just don't exist where I live. Best you can get are "vine ripened organic" tomatoes that barely taste any different than the regular mass-produced ones.
Seriously, I'm from CA and growing up tomatoes at the store actually had a smell. They smelled delicious. Now...nothing. They're all the same size and shape and color. Boring and blah.

I live in central California and buy my tomatoes all summer from a local farmer and I know exactly the scent you are referring to. When I bring them home and put them on my counter my whole kitchen is quickly filled with that scent
The color on those tomatoes is incredible.
We also do this in Turkey, sometimes with a different technique (we boil the puree to get rid of its juice and make it more paste like). It’s called “salça” here and it is like one of the main ingredients for almost every dish in Turkish cuisine. Really delicious.
serendipidus1 You can definitely prepare it with a slow cooker. Traditionally we make it with a wood fire by slowly boiling and always stirring but cooker works too. Salt is necessary though it helps with the shelf life, makes it more long lasting. That’s why she puts lots of salt, we do that too. I am not sure which kind of salt Italians use though but but in Turkey people use rock salt for this not sea or any other kind.
serendipidus1 I am glad you enyoyed Turkish food. We put it in jars to preserve them too just like saurkraut tbh. Salt is a must but you can use less (I am sorry for your mother btw I hope she is well and gets better day by day). Here, I found a short video for you that shows the process. I don’t think freezing would work though when you unfreeze it, it can become spoiled. This person did not put it in the jars at the end for presentation sake but you should. It will last longer that way. And you can ad some olive olive at the end so you can disconnect it from air to make it last longer.

In Reggio Calabria, my home town, in summer people are still use to make tomato sauce for the Winter at home. South of Italy still keep every single old tradition, those ritual food traditions keep togheter the families and are the roots from the past to our days

In Turkey, we also make "salca" . This is so similar. Salca can made from tomatoes or paprika. Nice to see similar food cultures in mediterraan countries.

This pasta granny makes me feel bad, lol, i'm 57 & she looks younger than me although i am a grandpa & the youngest of my 5 children is 30. We use tomato paste in U.S. not only with pasta sauces, etc..., but also for beef chili , beef stews, braising beef, etc... is used often in these popular dishes. This is similar to ''Salça'' in Turkey. We use that in almost every dish in here in fact when I was in Italy i searched for salça and couldn't find anything similar to it all there is was tomato paste.

No, only unirrigated tomato variety (siccagnu in sicilian means "dry"). Many others variety are too watery, and required long preconcentration phase before drying on the tables.
