By the way, I have some Thai friends who make this curry regularly and according to them splitting of the coconut milk is preferred - in fact they start by boiling milk until it splits & roast the paste in the oil that separates. It just makes it that much more flavorful.
i ve watched all the videos of thai curry but amongst all mam urs is the best coz u ve actually added the stuff which is easily available according to Indian market availability so few things can be replaced thats ok coz we aren't staying in Thai

Just one observation that, the second step(after preparing the paste) where you start saute-ing the veggies should be done only an hour before the intended time of serving, otherwise, some of the veggies become a bit too soft later.

Thanks Ruchi. I tried it out today and it came out well. Unfortunately the curry seemed darker and not as light as yours. Any reason for that. Also how does one get rid of the lemon grass fibres which are visible in the final curry? Can Pandunas and Thai eggplant be used as well? If yes, at what stage?
I have also faced this issue sometimes, depending on the quality of the lemongrass and galangal. One option I have tried would be to follow the recipe except grind the galangal and lemongrass separately and filter the contents through a tea strainer. This liquid can then be added to the ground paste in the main mixer.
