I have been doing it with coconut milk , and to have a “Greek Yogurt “like , I add organic gelatin powder ( diluted sim warm water ) to the mix , before putting in the refrigerator. It is perfect !!thank you for your amazing work . I love it 🙏🏻🌷✨🙏🏻

Do you periodically have to toss out recycle compost your grains as they grow? I could see a video in the future of just answering all of our questions! I learned a lot! I did make keeper for about a year and experimented with plant-based versus milk and combining. I have not been successful with water keeper but I think I got a bad lot to start with. I will persevere. I think keeper is one of the healthiest things we can put in our body.
Hi there! ►STORING MILK KEFIR GRAINS IN MILK For up to 2tbsp (40g) milk kefir grains per quart/liter of milk. Store in the refrigerator. Once you see the milk separate in the fridge, that indicates the kefir grains have consumed the lactose sugar in the milk that they utilize for food. * It does not indicate spoilage! It indicates fermentation. * At the time of separation, remove the milk from the fridge & strain the grains. Repeat the process by adding new/fresh milk to the grains & store in the fridge until separation of milk occurs once more. The grains in the quart/liter of milk will last about 7 days if you have 30-40g of grains in the quart/liter of milk. You could get up to 10 days if you have less than 30 g of grains. It may be a couple days +/- . Just watch the milk, that's your indicator. When it separates, it's time to switch milks. Even though the milk has separated, you can drink the milk that the grains were stored in after the grains are strained out… because it is indeed kefir… It’s just a very slow developing kefir because the cold temps of the fridge significantly slow down the fermentation process. Tip: the more milk you add in ratio to the grains quantity, the longer it can store in the fridge before milk separation occurs. If you have more than 40g of milk kefir grains, then split the grains and place each half in a quart/liter jar of milk.

Unfortunately, the remaining 0.05% of the contents is Polysorbate-60, a chemical emulsifier, thickener, and stabilizer. There are plenty of other brands out there that are delicious and that contain 100% coconut milk. Some are organic.

Unfortunately, no. The whey and milk protein that separate in dairy kefir is what allows for the making of thick kefir. But there is no whey nor casein in plant materials.
Grocery stores are selling coconuts these days for $2, these are the ones with husk removed, dark brown color shell, the coconut meat inside is thick with water. Make sure the coconut did not go bad, before you drink the water. Indian grocery stores have them too.
I recently found your videos and I love it!! Just made my first jar of Coconut milk kefir, all coming out as you said. Later on I will taste it🙏🏼 I can't have dairy nor lectins, so Coconut is a good choice for me, perhaps hauled hemp seeds too I have to research it Thank you !!
I loved your video!! I've been making L Reuteri for over a month with no issues this easy Kefir has been my Achilles heel!!!! First I used ultra pasteurized milk I was told that was not the right milk but my Kefir was beautiful and I had grains. I threw away the grains in fear I had messed it up and now with the new whole milk, no grains were left unless I smashed them LOL! I was using dehydrated/powder kefir grains but will try with fresh grains and see how I do. Thank you 😁

I've been binge-watching your videos and enjoy your method of teaching. My kefir grains arrived today, so I'm excited to start & only feel confident guided by your techniques and demos. Thank you so much for what you do, all your hard work producing quality content, and for all the knowledge you share with us! One question: Does the milk you store the grains in eventually go bad and so do you have to keep changing the milk? (I'll be using raw goats milk which I acquired yesterday for the first time, and I'm thinking it has a shelf life.) Same question for raw sheep and cows milk for storing kefir grains in. The kefir preserves the milk for quite some time and you don't have to toss it when its time to change out the storage milk. Its perfectly good kefir! Please see video description on how to store the milk. Scroll down near the bottom for the info 👍🙂

I have been making kefir from cow milk for years and never even thought of adding sugar to the milk. And it works just fine! Admittedly, I have never tried making any alternatives milks kefir, maybe those cannot be produce without added sugar. But milk kefir certainly can.
Milk kefir can ferment without added sugar because the lactose in animal milk IS sugar. That's what the probiotics are feeding on, natural milk sugar. Plant milk does not contain lactose sugar nor any other type of sugar... which is why it has to be added.

No where in this plant milk video am I demonstrating using cow's milk for kefir making. The sugar is added in this video is to either nut milk, coconut milk or seed milk, not cow's milk. The milk kefir grains are stored in cow's milk and never did I say to add sugar to the cow's milk they are stored in. Perhaps something in this video was misunderstood. Please send me the specific time point in the video where you think I said to add sugar to cow's milk. 👍👍

This is for making plant based kefir for people who do not want to have dairy. The plant milks will need some sugar because unlike cows milk, It doesn’t have the sugars needed to ferment. This video has nothing to do with anything about “Cows milk”

My kvass has always formed a thick spongy white layer on top..i see under the spongy white film, the kvass is clear, Is it safe to use once the spongy white layer is removed...... Please please please, make few videos or atleast 1 video covering this problem with beet Kvass. . And I live in India , my region has 100 deg F now in summer

Yes, you can do soy milk the same way as nut milk. I didn't mention it because homemade soy milk kefir does not taste good! It's very bitter😝 If you want to do soy milk, I recommend store bought boxed because they heavily process the soy to remove the natural bitter flavor so it tastes mild and smooth. But you can certainly make your own and see for yourself!😊🌸
I am new to whole process. I have been buying it in the store and love drinking it. Three questions: 1 - does the process described above produce a thick kefir like I get in the store? 2 - is there a way to take this process further and make yogurt? I cannot have dairy but would like a "greek yogurt" type kefir to use in certain recipes. 3 - do you change the whole milk that the grains are returned to after each use? thanks for the video - it really helped me!
HI there, 1. plant milks cannot produce thickness because there is no whey in them to separate out nor the protein casein. In homemade kefir, it is the casein and separating out the whey that makes dairy kefir thick. In store bought kefir, they add thickeners (the thickness is not naturally derived) Homemade kefir & commercial kefir are not the same (despite being sold as so). My milk kefir grans are growing like crazy and I am thinking of using some of them to make a coconut kefir for a change of taste. I don't have as many aater kefir grains, so I will end up using my milk kefir grains.. I love drinking kefir and have seen many changes to my gut and digestion since I started drinking them.

If you want a break, they last in the fridge up to a week in milk but, if you have grains you need to store longer or you have too many, you can freeze them by placing them in a container covered in milk powder; I have a bunch of extra stored grains from a year ago, and I used them and they came back to life ! Freezing and storing them is a good backup in case anything happens to your grains, or if you want to give any to other people….. ; )
I make the kefir with milk grains as you suggested and suffered heartburn. I’m assuming it’s the yeast component and have kept the lid loose to minimize effervescence. Take small portions before, during or after a meal…same result. Can you recommend a solution? Love your channel!

For thicker plant milk kefir, don't strain the pulp. After blending pour it all into the jar and ferment the same as demonstrated... The pulp will thicken it up, but it will never be like yogurt.... 👍😊
Wonderful! I like unsweetened yogurt kefir and don't mind a little fizz, but not too much carbonation. Does more carbonation always mean more good bacteria?
What a wonderful channel I’m hooked on your content 🙏 I wonder if I killed my milk kefir grains? I used them in canned coconut milk for 30 hours Unfortunately I did not add sugar because I only found you today . But the grains still seamed to love it since they grew in there. Unfortunately I did not have cows milk at hand ( bad planning ) so I stored them over night in the fridge in this new coconut kefir. The next day I bought milk and started the process. Now 12 hours later the cows milk has not fermented even though I smell a little of the kefir sourness. The grains however look healthy 🤔
You can successfully ferment coconut milk without added sugar (the only plant milk you can) and don't worry, I don't believe you killed your grains. They may need a bit of a revival period (a couple of days with fresh feedings) - but they'll bounce back.👍😊

Could you talk about kefir powder starters? I heard this works with those who don’t want to work with grains or don’t have time, I’ve tried a started powder with soy milk it has to be soy beans and just water, it worked well, other milk boxes I was told won’t work but I’m encouraged how you tried other boxed milks with the real grains
Yes you can use powders instead... just keep in mind they are not the same fermented product (despite being called 'kefir starter') than kefir made with the grains. Hey- so interesting- thank you! A quick note- rinsing the animal milk off of the water kefir grains does not make it vegan. We do not use animal products to support an end intention of goal- it isn’t about the residue, it’s about not using someone’s body without their consent for our benefit (milk from an animal who likely didn’t want to be used for that purpose), especially when it is not necessary. I just made some kefir with coconut milk and milk kefir grains without sugar and it fermented totally fine. My understanding is that I can do this process a couple times and then use milk the next couple times to feed and then back to coconut again. What say you? The reason is that I don't eat sugar.

Unfortunately, no. The whey and milk protein that separate in dairy kefir is what allows for the making of thick kefir. But there is no whey nor casein in plant materials.

Grocery stores are selling coconuts these days for $2, these are the ones with husk removed, dark brown color shell, the coconut meat inside is thick with water. Make sure the coconut did not go bad, before you drink the water. Indian grocery stores have them too.

I loved your video!! I've been making L Reuteri for over a month with no issues this easy Kefir has been my Achilles heel!!!! First I used ultra pasteurized milk I was told that was not the right milk but my Kefir was beautiful and I had grains. I threw away the grains in fear I had messed it up and now with the new whole milk, no grains were left unless I smashed them LOL! I was using dehydrated/powder kefir grains but will try with fresh grains and see how I do. Thank you 😁

I've been binge-watching your videos and enjoy your method of teaching. My kefir grains arrived today, so I'm excited to start & only feel confident guided by your techniques and demos. One question: Does the milk you store the grains in eventually go bad and so do you have to keep changing the milk? (I'll be using raw goats milk which I acquired yesterday for the first time, and I'm thinking it has a shelf life.) Same question for raw sheep and cows milk for storing kefir grains in. The kefir preserves the milk for quite some time and you don't have to toss it when its time to change out the storage milk. Its perfectly good kefir! Please see video description on how to store the milk. Scroll down near the bottom for the info 👍🙂

I have been making kefir from cow milk for years and never even thought of adding sugar to the milk. And it works just fine! Admittedly, I have never tried making any alternatives milks kefir, maybe those cannot be produce without added sugar. But milk kefir certainly can.
Milk kefir can ferment without added sugar because the lactose in animal milk IS sugar. That's what the probiotics are feeding on, natural milk sugar. Plant milk does not contain lactose sugar nor any other type of sugar... which is why it has to be added.
@@CleanFoodLiving This was precisely my point: lactose in the milk should be sufficient for the culture to grow so I don't understand the need to add any extra sugar (yes, I know very well that lactose IS sugar). So what is the point of doing that? Will it yield more kefir? It's not a criticism, a genuine question. I would try adding sugar if I knew what the advantage of it was...
@@nataliawilson9477 I don't understand where you are coming from. No where in this video did I say to add sugar to cow's milk. No where in this plant milk video am I demonstrating using cow's milk for kefir making. The sugar is added in this video is to either nut milk, coconut milk or seed milk, not cow's milk. The milk kefir grains are stored in cow's milk and never did I say to add sugar to the cow's milk they are stored in. Perhaps something in this video was misunderstood. Please send me the specific time point in the video where you think I said to add sugar to cow's milk. 👍👍
@@CleanFoodLivingI think she is missing the point, thinking that you’ve been adding the sugar to aid the milk kefir grains with fermentation, when in reality the sugar is added to aid the PLANT milk. The milk kefir grains just happen to be one of the options you can use.
This is for making plant based kefir for people who do not want to have dairy. The plant milks will need some sugar because unlike cows milk, It doesn’t have the sugars needed to ferment. This video has nothing to do with anything about “Cows milk”

My kvass has always formed a thick spongy white layer on top..i see under the spongy white film, the kvass is clear, Is it safe to use once the spongy white layer is removed...... Please please please, make few videos or atleast 1 video covering this problem with beet Kvass. . And I live in India , my region has 100 deg F now in summer

Yes, you can do soy milk the same way as nut milk. I didn't mention it because homemade soy milk kefir does not taste good! It's very bitter😝 If you want to do soy milk, I recommend store bought boxed because they heavily process the soy to remove the natural bitter flavor so it tastes mild and smooth. But you can certainly make your own and see for yourself!😊🌸

I am new to whole process. I have been buying it in the store and love drinking it. Three questions: 1 - does the process described above produce a thick kefir like I get in the store? 2 - is there a way to take this process further and make yogurt? I cannot have dairy but would like a "greek yogurt" type kefir to use in certain recipes. 3 - do you change the whole milk that the grains are returned to after each use? thanks for the video - it really helped me!
HI there,
1. plant milks cannot produce thickness because there is no whey in them to separate out nor the protein casein. In homemade kefir, it is the casein and separating out the whey that makes dairy kefir thick. In store bought kefir, they add thickeners (the thickness is not naturally derived) Homemade kefir & commercial kefir are not the same (despite being sold as so). Thanks for the detailed explanation of alternate milk and water kefir. My milk kefir grans are growing like crazy and I am thinking of using some of them to make a coconut kefir for a change of taste. I don't have as many aater kefir grains, so I will end up using my milk kefir grains.. I love drinking kefir and have seen many changes to my gut and digestion since I started drinking them.
I think you want to add coconut milk and not coconut water.

I freeze both types for longer term storage. Mine would continue to multiply if I kept them in the fridge.

Hi, so glad to hear you're enjoying fermenting! I have storage instructions in the video description... scroll down to the bottom and you'll find them!
If you want a break, they last in the fridge up to a week in milk but, if you have grains you need to store longer or you have too many, you can freeze them by placing them in a container covered in milk powder;
I have a bunch of extra stored grains from a year ago, and I used them and they came back to life ! Freezing and storing them is a good backup in case anything happens to your grains, or if you want to give any to other people….. ; )
I make the kefir with milk grains as you suggested and suffered heartburn. I’m assuming it’s the yeast component and have kept the lid loose to minimize effervescence. Take small portions before, during or after a meal…same result. Can you recommend a solution? Love your channel!

For thicker plant milk kefir, don't strain the pulp. After blending pour it all into the jar and ferment the same as demonstrated... The pulp will thicken it up, but it will never be like yogurt.... 👍😊

I wonder if I killed my milk kefir grains?
I used them in canned coconut milk for 30 hours
Unfortunately I did not add sugar because I only found you today . But the grains still seamed to love it since they grew in there. Unfortunately I did not have cows milk at hand ( bad planning ) so I stored them over night in the fridge in this new coconut kefir. The next day I bought milk and started the process. Now 12 hours later the cows milk has not fermented even though I smell a little of the kefir sourness. The grains however look healthy 🤔
You can successfully ferment coconut milk without added sugar (the only plant milk you can) and don't worry, I don't believe you killed your grains. They may need a bit of a revival period (a couple of days with fresh feedings) - but they'll bounce back.👍😊

Could you talk about kefir powder starters? I heard this works with those who don’t want to work with grains or don’t have time, I’ve tried a started powder with soy milk it has to be soy beans and just water, it worked well, other milk boxes I was told won’t work but I’m encouraged how you tried other boxed milks with the real grains
Yes you can use powders instead... just keep in mind they are not the same fermented product (despite being called 'kefir starter') than kefir made with the grains. A quick note- rinsing the animal milk off of the water kefir grains does not make it vegan. We do not use animal products to support an end intention of goal- it isn’t about the residue, it’s about not using someone’s body without their consent for our benefit (milk from an animal who likely didn’t want to be used for that purpose), especially when it is not necessary. I just made some kefir with coconut milk and milk kefir grains without sugar and it fermented totally fine. My understanding is that I can do this process a couple times and then use milk the next couple times to feed and then back to coconut again. What say you? The reason is that I don't eat sugar.
If it's fermenting ok w/o the sugar, then great - keep doing what is working for you. I have heard the same 👍
