  • I love Ackee and Saltfish and wanted to share yet another of my childhood favourite food memory. I hope you will give it a try. You can serve it with rice, fried dumplings, hard food, festivals basically any of your favourite Carbs. It can also be served anytime of the day - you choose if it is going to be breakfast, lunch or dinner. This is the beauty of this very versatile dish. I love it and had it with fried dumplings, fried plantain, avocado and steamed cabbage...delicious.
You can purchase the Ackee and Saltfish from your local supermarket or Asian food stores. I bought mine from my local Sainsbury in the UK.
Note: boil the salt fish for 8-10 minutes before draining away the water and replenish with cold water to rinse a couple of times before breaking into bite size pieces and adding to the pan with sautéed vegetables. This fish is skinless and boneless although you may find a few strays so be careful.
    Preparation time: 7 mins
    Cooking time: 18 minutes
Total cooking time: 25 minutes (approx)
    Ingredients:
    Ackee
    Saltfish
    Coconut oil (optional)
    Olive oil
Garlic (optional if you don’t like it)
    Spring onion (I used two)
    1 handful of baby tomatoes
    Mixed bell peppers
    Onion
    Ginger (to taste)
    Thyme
    Scotch bonnet pepper
Green seasoning (optional but elevate the flavour. Check out my video on my channel for recipe)
Gochujang (you can use tomato paste or spicy tomato ketchup like Grace)
    All-purpose seasoning
    Pimento
    Salt & Black pepper
    Onion and garlic granules
    Butter
Add a splash of boiling water to create some sauce to the dish.
    EnjoyX
